• Grilled Summer Veggies

I am still all in on the summer veggies that are everywhere right now and so to celebrate them I heated up to grill to let them shine. It is still summer  Y’all I know I am so ready for cooler weather (& pumpkin spice everything) but one of the best summer things happening right now are the veggies.  There are some amazing veggies happening at the farmer’s markets and grocery stores. The zucchini is amazing, the squash is just so good, then onions are the perfect sweetness, broccolini, asparagus everywhere & the corn… y’all THE CORN!  PS… more corn recipes coming, I cannot get enough. Summer Lovin & Everything…

  • KETO Poblano Chicken Casserole

Are you a fan of stuffed jalapeños?  I AM and this KETO Poblano Chicken Casserole is everything you love about a stuffed jalapeño and MORE! Starting with Chicken! For the sake of ease I used a rotisserie chicken.  I just love how easy a rotisserie chicken can make dinner.  If you do not have one on hand, or don’t love them like I do you can use 4-5 cooked chicken breasts, and just shred them up.   Oh the sauce! The delicious sauce is a wonderful combo of cream cheese, heavy cream, garlic, chicken stock and some spices.  It is loaded with tons of FLAVOR and is so easy you…

  • Cheesy Broccoli Stuffed Chicken (KETO Friendly)

I love Cheesy Broccoli Stuffed Chicken, well I love most stuffed chickens (like this one).  There is just something so decadent and almost fancy about it.  The thing I love most is that it is really so easy to make, and you can stuff chicken with really almost anything.  Yes…really almost anything.  Lets start with the Veggies… Broccoli & Peppers For this stuffed chicken recipe I went with lower carb veggies.  To keep it simple I chose broccoli and bell peppers.  I love these 2 veggies together and they just look so pretty… I love pretty food.   If you wanted you could use asparagus, cauliflower, onions, spinach … really…

  • Creamy Chicken and Cauliflower Rice Casserole

Ok everyone…Today is THE DAY.  Today is the day that I started my KETO journey.  And today is also the FIRST time I have ever had cauliflower rice…it is a VERY BIG DAY peeps! So why KETO? There are 2 main reason why I am jumping onto the keto train.  First is for me.  I have always struggled with my weight and in the last year I have become even more motivated to get it under control, being back in the dating world will do that to you.  I have a really good friend who started this journey a few months ago and has had tremendous success, I am so…

  • One Pan Sausage & Veggies

YES you read that right this is a one pan dinner…yes ONE pan.  Even better it is loaded with veggies and yummy turkey smoked sausage making this dish not only easy but also delicious and not so bad for you too. Season, Season, Season To make this dish really stand out it is all about the seasoning.  To keep it simple though I chose a seasoning mix that brought a ton of flavor but you probably already have everything you need in the pantry.   I mixed together salt, pepper, garlic powder, chili powder and dried parsley.   If you wanted to use your favorite all purpose seasoning you could…

  • Roasting it makes it so much better

I am so excited the weekend is here.  Fall is starting to filter in, baseball playoffs are getting exciting and football is what the weekends are all about.  To make this weekend something to remember you have to try this Roasted Salsa Verde.   Green is better (in my opinion) My favorite salsa has always been a green salsa.  I love the hint of tang the tomatillos bring with a little heat and freshness of lime in each bite.   I judge Mexican food restaurants by their green sauce.  If I want to pour it all over anything and everything then it is a good restaurant.   Roasting is the…

  • A whole new way to Fajita

I could literally have a fajita, of some sort, for every singe meal.  Yes for breakfast, lunch and dinner and maybe even a snack.  As much as I love fajitas, sometimes I just don’t want to take the time to fix them…well that is until now. Peppers and Onion…OH YEAH! One of my favorite parts of any fajitas are the peppers and onions.  I just love the little charred bits and the hint of sweetness and a little spice in each bite.   Even better they add a ton of flavor to the meat, in this case chicken, which makes them a must have in all my fajita dishes. Careful…

  • not your momma’s chicken soup

The high today in the Houston Area is 84.  I cannot believe it as I sit here and write it, it is going to be in the mid 80’s in February.  Gotta love Texas weather. Even though it is starting to warm up a little The Hubby and I are still is soup mode and this soup definately hits the spot. Not your mama’s chicken soup Don’t get me wrong I am all about my mama’s chicken soup.  It is delicious, but sometimes I like to change it up a bit and this Chicken Fajita Soup is one of my favorites. This soup brings together all my favorites from traditional…

  • it’s time for soup (i.e. chowder)

Thanksgiving is over.  I don’t know about you but I still can’t believe that is almost December and Christmas is coming. • Roasted Balsamic Veggie Goodness

Over the last few years I have learned to LOVE veggies.  I love them raw, grilled & steamed but my favorite is roasted.  And these roasted veggies are my ALL TIME FAVORITE!! Good for you… Now we all know that veggies are a good choice but when you make them extra yummy they become a GREAT choice.  The key to make them even better than normal is all in the seasoning.  Just a little goes a long way.  So with a little extra virgin olive oil, salt, pepper, garlic powder and chili powder you can take ordinary and make it extra-ordinary. Since the veggies are loaded with goodness for you splurge…
