• Veggie Enchilada Stack

It is a Veggie Enchilada Stack kinda night.  Veggies, chicken, beans, cheese and tortillas sound like a must make dinner. It’s all about the veggies… The beauty of this recipe is you can use whatever veggies you have on hand (or whatever ones your family will eat).  This time around I stuck with squash, zucchini and peppers.  Next time I am going to throw in some eggplant and possibly mushrooms for even more heartiness.   One of the secrets of this dish is to season every layer, including the veggies.  I kept it simple with just some salt, pepper and chili powder but made sure there was enough to make…

  • Chicken & Gnocchi Bake

I have a gnocchi confession… I am secretly obsessed with it!  I like it all sorts of ways, with all sorts of things but this bake is a perfect option for a yummy, comforting weeknight dinner.  A LITTLE CHICKEN TALK I have recently become a BIG, BIG fan of chicken thighs.  I am literally using them every week.  Sometimes I just roast them up and pair them with a quick salad and veggie and sometimes I use them in a  casserole… LIEK THIS ONE! I always sear them in a pan.  This not only adds some great color to the dish but also a TON of flavor.  I also make…

  • KETO Broccoli & Chicken Bake

KETO Broccoli & Chicken Bake is the perfect back on KETO recipe.  It comes together super quick and is SO, SO GOOOOD! Broccoli … Please! I never thought I would say this but broccoli is definately one of my MOST favorite veggies.  Yes, this is coming from the gal who did not eat any veggies growing up other than the occasional green bean.   Over the past several years I have been adding veggies into my world and broccoli has quickly become a MUST HAVE in my fridge all the time. If broccoli is a no go in your house you could use cauliflower, asparagus or another of your favorite…

  • Skillet Chicken Enchiladas

Skillet Chicken Enchiladas are the perfect quick fix dinner and I am all about a quick fix dinner.  After coming home from work I defiantly love the idea of dinner being ready in less than 45 minutes.   One Pan and DONE! Everything for this recipe is all done in one skillet,  yes you read that right ONE SKILLET!  You make the sauce, cook the chicken and finish it all in one skillet.  That means only one skillet to clean and tons of flavor being created.   Make sure you use a high side skillet and not a shallow skillet… it will bubble over once you add in the tortillas…

  • KETO Poblano Chicken Casserole

Are you a fan of stuffed jalapeños?  I AM and this KETO Poblano Chicken Casserole is everything you love about a stuffed jalapeño and MORE! Starting with Chicken! For the sake of ease I used a rotisserie chicken.  I just love how easy a rotisserie chicken can make dinner.  If you do not have one on hand, or don’t love them like I do you can use 4-5 cooked chicken breasts, and just shred them up.   Oh the sauce! The delicious sauce is a wonderful combo of cream cheese, heavy cream, garlic, chicken stock and some spices.  It is loaded with tons of FLAVOR and is so easy you…

  • Taco Tuesday KETO Taco Bake

If you have hung out on here very much you know I am a fan of casseroles.  Especially ones that are loaded with tons of flavor and cheese… lots of cheese.  This KETO Taco Bake is all that and MORE! Cauliflower Surprise! To add a little something extra to this pretty traditional taco casserole I started with a cream cheese cauliflower rice layer.  I love the creaminess and richness it adds to each bite while keeping it all super KETO friendly.   Don’t worry though… the cauliflower layer will not add a ton of work.  You can cook it up super fast in a skillet and then stir in the…

I don’t know about you but I love a good casserole on a cold night.  Now I know a lot of people love a good stew or soup but for me I am a casserole girl and this KETO friendly Chicken Bacon Ranch Casserole was AMAZING! Loaded with flavor This casserole is loaded with tons and tons of flavor.  It all starts with seasoning the chicken with your favorite all purpose seasoning.  I love this seasoning because it is course not overly salty (and there are no carbs in it) but any seasoning blend will work.   I also make sure and season the veggies before I roast them.  This…

  • Bacon Cheeseburger Casserole (KETO/Low Carb)

Who doesn’t love a good casserole.  I know I do.  They are my comfort food and this Bacon Cheeseburger has everything a good casserole should have, and then some. Bacon, please This casserole all starts with bacon.  I used 1/2 lb of bacon and cut the strips into small pieces and then cooked it all in a large skillet.  If you leftover bacon you can use it, but I love how the bacon flavor becomes the base of the casserole when you cook it in the same skillet as the meat. The bacon adds so much flavor and really elevates this casserole to the next level.  My moms hamburger casserole…

Super Easy To make this…
