    I am still all in on the summer veggies that are everywhere right now and so to celebrate them I heated up to grill to let them shine. It is still summer  Y’all I know I am so ready for cooler weather (& pumpkin spice everything) but one of the best summer things happening right now are the veggies.  There are some amazing veggies happening at the farmer’s markets and grocery stores.     Skillet Brussels Sprouts and Bacon are the perfect quick side for dinner tonight.  Literally can be ready in 20 minutes! KETO baby! I love this side not only because it is Brussels Sprouts (which I LOVE) but it is also KETO friendly, oh yeah and there is bacon.  I mean I am not sure it can get any better than sprouts, bacon, butter and super quick and easy.     I LOVE, LOVE, LOVE risotto.  I love how decadent, rich and full of flavor it is.  Traditional risotto (like this recipe) is not KETO friendly but when you use cauliflower rice it becomes VERY KETO friendly.   One skillet is all you need The beauty of risotto is that it is typically made all on one pan.  This makes it a perfect side dish for a busy weeknight or lazy weekend.   This time around I went with a simple parmesan risotto but if you wanted to add in some mushrooms or bacon you would cook them in the skillet before you add in the cauliflower rice.  This way the…
