Keto Pumpkin Blondies

Blondies have always been favorite of mine.  I love ones with butterscotch chips, peanut butter or chocolate chips.  I am not picky …. but one of my favorite blondies is a pumpkin blondie with dark chocolate.

Just because I am doing KETO/Low Carb doesn’t mean I cannot still enjoy everything pumpkin this Fall.  I have fallen in love with my KETO Pumpkin Bread, it really is my most favorite pumpkin bread EVER.  I also love these Pumpkin Butter Cookies for a Fall cookies everyone can love.  Fall is not Fall without Pumpkin yummies.

To add one more Pumpkin treat to my fall dessert tray I give KETO Pumpkin Blondies… trust me they are delicious!!  

Pumpkin + Chocolate = AMAZING

I love pumpkin and chocolate together, but especially dark chocolate and pumpkin together.  For these blondies I used Trader Joe’s 72% Cacao Chocolate Pound Plus.  I love this chocolate because it is cheaper than most other chocolates and it is rich, creamy and the perfect bitterness to make it stand out.

It is also fairly low in carbs making it my go to for all desserts with chocolate.  If you want you can use Lily’s no sugar added chocolate or your favorite chocolate chip.

Keto Pumpkin Blondies

A quick and easy KETO/Low Carb Pumpkin Blondie that is a perfect Fall treat everyone can enjoy

Ingredients

1 1/2 cups almond flour
1/4 cup coconut flour
1 cup granulated Swerve, or your favorite sugar substitute
1/2 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons pumpkin pie spice
1/2 cup unsalted butter, melted
1/3 cup pumpkin puree
1 large egg
1 teaspoon vanilla extract
1/2 cup chopped dark chocolate - I used Trader Joes Dark 72% Cacao Chocolate Pound Plus (or no sugar added chocolate chips)
Optional Topping
Additional shaved chocolate using a micro-blade
Sea Salt

Directions

Preheat oven to 350
Line a 9x9 baking pan with parchment paper, set aside
In a large bowl whisk together almond flour, coconut flour, Swerve or sugar substitute, baking soda, salt and pumpkin pie spice
Stir in melted butter, pumpkin puree, egg and vanilla until smooth
Stir in chocolate, until just combined
Spread dough into pan
Bake for 18-20 minutes, or until center is just set
Remove and let cool completely
Cut and ENJOY
