Pumpkin Butter Cookies (KETO/Low Carb Friendly)

Happy Fall!!  I cannot believe it is almost October!  To celebrate I made KETO friendly Pumpkin Butter Cookies and they are AMAZING!

The perfect Fall cookie

One of my biggest fears going on KETO was missing out on the sweets.  To be honest I do not have a big sweet tooth but I do like a little something sweet here and there.  A couple of friends suggested I make “fat bombs” immediately and I did and I love them (I will post a recipe for those soon) but the last few days I have been craving a cookie or cake…specifically pumpkin cookies or cake.  Thankfully I adjusted a favorite recipe to make it KETO friendly and I am LOVING them!

This cookie is loaded with pumpkin spice flavor and is the perfect mix of a cookie and pie.   I know that sounds crazy but the center of these cookies are super moist and remind me of a delicious pumpkin pie.  It really is a perfect Fall cookie.

Only 1 Net Carb… yes ONLY 1

As much as I miss my sweet treats I am not going to waste a bunch of carbs on just 1 cookie or 1 slice of cake…well now I don’t have too.  Each cookie only has 1 nest carb…that means I can have your know 3 or 4 at least, maybe even more if I really watch it.  

Not too sweet

As much as I love something sweet here and there I am not a fan of overly sweet desserts and these cookies are just perfect.  There is the perfect blend of sweet and spice from the pumpkin pie spice, making these a perfect afternoon or evening treat. 

I can tell you they pair perfect with a nice cup of dark coffee or hot tea.

Pumpkin Butter Cookies (KETO/Low Carb Friendly)

Light and fluffy Pumpkin Butter Cookies that are not only delicious and perfect for Fall but also KETO/Low Carb friendly.

Ingredients

1/2 cup salted butter, room temperature
1/2 cup Swerve Granulated Sweetner (or sugar substitute of your choice)
1/2 cup pumpkin puree
1 egg
1 teaspoon vanilla bean extract or vanilla extract
2 cups almond flour
1/2 teaspoon baking powder
1/2-1 teaspoon pumpkin pie spice
Optional
1 cups sugar free chocolate chips
Powdered Sugar Substitute for dusting

Directions

Preheat oven o 300
Line 2 cookie sheets with parchment paper
In the bowl of a stand mixer cream together butter and sugar until light and fluffy
Add in pumpkin, egg and vanilla bean extract, mixing until well combined
In a small bowl whisk together almond flour, baking powder and pumpkin pie spice
Add in flour mix to pumpkin mix until just combined
Add in chocolate chips if using, mixing until just combined
Roll dough into 27 balls (about a tablespoons size) and place onto prepared pans
Gently press down each ball with the palm of your hand
Bake for 20-22 minutes or until edges begin to brown
Let cookies cool completely on sheet pan
Dust with powdered sugar is using
