One Pot Cajun Pasta

I just don’t think you can ever have too many one pot meals in your arsenal of recipes.  It is even better when the one pot meal is loaded with TONS of flavor, cheese and is super easy.

One pot…thats all

The beauty of this dish is that with everything being cooked in the same pot the flavors just keep building as you continue cooking, giving this dish a TON of flavor.  First you start with the chicken, spices then the sausage and then comes the cream and pasta.  

Everything comes together perfectly and then you stir in the cheese to finish off this super easy meal.

OH the sauce

One of my favorite parts of this dish is the sauce.  As the pasta cooks the cream and chicken stock come together to create a rich and velvety sauce that coats the pasta, chicken and sausage perfectly.  Then when you add in the cheese it becomes even better.  

Now if you do not want to add in the cheese you don’t have too but I highly recommend it.

Options, Options, Options

This dish is very versatile.  I prefer chicken and sausage but if you would like to use only one you could use just chicken or just sausage.  Just adjust cooking time in the beginning as needed.

You could also change up the cheese.  I used parmesan but you could use a combo of cheese such as an italian blend.

A little kick

There is a little kick from the cajun seasoning but it is not too much.  It has just enough to make it pop a little and bring out all the best flavors from the chicken and sausage.

If you do not want any spice you could use just salt, pepper, garlic powder and a little paprika.

One Pot Cajun Pasta

This One Pot Cajun Pasta is a perfect weeknight dinner. It is quick and easy and loaded with tons of chicken and sausage making for a dinner everyone is sure to love.

Ingredients

4 tablespoons extra virgin olive oil, divided
1 pound boneless, skinless chicken breast, cut into bite size pieces (you could use boneless, skinless thighs if you would like)
1 onion, diced
1 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic powder
1 teaspoon cajun seasoning
14 oz smoked sausage, sliced on diagonal
4 garlic cloves, minced
1 quart chicken stock
2 1/2 cups heavy cream (or half & half)
1 pound penne pasta
1 tablespoon cajun seasoning
1/4 - 1 /2 cup grated parmesan cheese
1/4 cup fresh parsley, chopped

Directions

In a large pot heat 2 tablespoons olive oil over medium heat
Add in cut up chicken, diced onion and seasonings (salt, pepper, garlic powder and cajun seasoning)
Cook for 2-3 minutes, or until chicken starting to brown
Add in sausage and garlic, cooking for another 2-3 minutes, stirring often
Stir in chicken stock, cream, pasta and cajun seasoning
Bring to a boil, reduce heat and cover, cooking for 15-20 minutes, or until pasta is tender
Remove from heat and stir in cheese
Taste and adjust seasoning as needed
Serve with fresh parsley, additional cheese and cajun seasoning, if desired

Notes

You can use turkey sausage if you desire You could also add in more veggies if you would like when you add in the sausage
