• zucchini for everyone

I have found that zucchini is one of those veggies that people either love or not love…but I have found a solution with these zucchini spears. OK I know you maybe asking yourself…a spear for dinner made out of zucchini?  Yes, I made spears made out of zucchini coated in a  crispy crust that will make everyone a zucchini lover. The very first time I had zucchini (that I can remember) was in Missouri close to my grandparents farm.  There was a restaurant on top of the hill and we would eat there A LOT!  Every time we would go there we would always order the fried zucchini for an…

  • caramel makes me happy

I LOVE caramel anything really.  I love it in my coffee, I love it on ice cream, I love it swirled into cakes and I especially love it with brownies.  Over time I have made a couple of caramel brownie recipes (like this one)  but this new recipe is The Hubby’s favorite one hands down. For most of my other caramel recipes I use my super easy homemade caramel sauce (recipe can be found here) but for this brownie recipe I used the caramel candies.  You know those little square bits of yummy goodness wrapped in that annoying cellophane…well just because I love caramel (& The Hubby) so much I unwrapped them…

  • crispy without the guilt

Crispy & good without guilt sounds like a perfect dinner to me.  Crispy with cheese & good sounds even better!! About 6 weeks ago I had surgery and was not able to get around very well for several weeks.  Finally about 3 weeks ago I could start getting back into the kitchen (much to The HUbby’s dismay) and the first thing I wanted to make was parmesan chicken. OK, now if you know me at all this is not something that I would normally be craving, but after several weeks of food from restaurants and The HUbby’s cooking (which was really great) I wanted a parmesan chicken…I don’t know why, it…

  • hello new week…

I love Monday’s, the beginning of a new week!  It is like the greatest start over day and to make it even better it comes around every 7 days. Each Monday I make a point to take some time Monday morning I take some time to sit write down and my accomplishments from the previous week, goals for the new week, some things I am thankful for and then I get to work. I just feel so energized and ready for a great week! Whether you have a Monday morning routine (or not) this colorful reminder is something good to remember for sure.  Each new week can bring about great new things…

  • making jam in the oven…yes the oven

Is there anything better than homemade jam?  I don’t know about you but I love me some homemade jam, but I never thought I could make my own without a whole lot of time and trouble…well I am here to change your mind…we are going to be making jam in the oven. OK…now I know some of you might be thinking I am a little crazy.  First I am talking about making jam, and second I am talking about making jam in the oven…yes both are true. So jam in the oven, really?  That is what I thought when I first saw the recipe.  I couldn’t understand how that would…

  • it’s biscuit time

If it were up to The Hubby it would always be biscuit time.  I honestly think he would have biscuits at every meal if I made them…unfortunately for him I rarely make them so when I do it is quite the BIG DEAL! I decided a while ago that since The Hubby loves them so much maybe it should become his job to make them. I mean he could make the biscuits when I was making dinner or the gravy (if it were breakfast…or dinner…WOW I really want gravy now). Anyway back to the biscuits…I was showing The Hubby several recipes I have gathered over the years and he settled…

  • be awesome…always

Do you ever have one of those days that you wake up and you just kinda feel blah?  Well, I know I have and I wish I would have had this sign posted somewhere to remind me to be awesome.  I know that may sounds kinda cheesy but its true…I love having uplifting sayings around every so often to just remind me to look at the brighter side of things…and this one is perfect for just that very thing. As simple as this sounds it can sometimes be very hard to remember…especially in the middle of a trial or uncertain time in your life.   I learned this lesson when…

  • mashin’ up a sweet tater

A sweet tater (or potato if your not my dad) is God’s gift to the land of yummy starches…at least in my opinion.  I just love the bit of sweet (or sometimes a lot of sweet) and the bright orange color and of course all the delicious dishes you can make with these little orange treats. OK, now I know some of you might be thinking that a sweet tater dish is for the holidays, like in this sweet potato casserole, or as a side to your burger in fry form…but trust me this mashed sweet potato recipe is a must make that will make everyone fall in love with sweet potatoes…

  • cherish every moment

Time can really fly by if your not careful.  I can’t believe my nephew is already 2 years old and my niece will be one later this summer…before I know it he will be 6 and she will be 5…and I will be…well, that much older.   One of the things I have learned since becoming an aunt is to really cherish every moment…and this quote says it perfectly. I challenge you, as I challenge myself, to really take time to enjoy all the little moments.  Don’t get so busy with work, the chores or just other busy work to not take time to really cherish the special moments of the…

  • simple salmon = delicious

As I have said before simple really is sometimes the best way to go…and this simple salmon is definitely the best I have had in a while.   The Hubby and I love salmon and we have had many different ways.  Some with sauces, such as this Lemon Caper Salmon, or some grilled like this Grilled BBQ salmon … but I have to tell you one of our favorites is just this simple salmon and this spice combo makes it AMAZING!! The spices are simple, and you probably have them all on hand…and if you don’t you really should because they can make almost anything yummy…but anyway this simple combo adds just…
