Monster Cookies

Spring is finally here…well at least according to the calendar.  I don’t know about you but I am ready for some warmer weather and the sun to come out for more than 1 day at a time.   To celebrate Spring I decided to make some super fun cookies with the adorable Spring M&M’s.  

Just the colors of the M&M’s make me happy.

Monster cookies have always been  favorite of mine.  I love the combo of oats, peanut butter and chocolate all together.  Not only is the texture amazing, but there is just so much yummy in each bite.  

Some of the monster cookies I have had use peanut butter chips, coconut, dried fruit or even different candy.  The possibilities are endless.  Add in whatever you want to make them perfect for you and your family.

Oh the dough….

The key to these cookies is to not over mix the dough.  If you do they will become tough, and who wants a tough cookie?  I know I don’t.   To keep the cookies nice and tender I stir in the oats, M&M’s and the chocolate chips.  

The dough is super stiff so you will definately get a good arm workout but trust me, you will be glad you did.  Just stir it long enough to get everything incorporated evenly.

A hearty cookie loaded with peanut butter, oatmeal, chocolate and M&M's....everything you love in a cookie!!

Ingredients

1 cup butter, room temperature
1 cup brown sugar
1/2 cup sugar
1 1/2 cups creamy peanut butter
2 eggs, room temperature
2 teaspoons Vanilla Bean Extract (or vanilla extract)
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 cup quick cook oats
1 1/2 cups M&M's, divided
1/2 cup semi-sweet chocolate chips
1/2 cup dark chocolate chips (or any variety you prefer)
Sea salt for finishing
Optional Add-In's
Peanut Butter Chips
Coconut
Dried Fruit
Another favorite candy

Directions

Preheat oven to 350
Line 2 cookie sheets with parchment paper, set aside
In the bowl of a stand mixer cream together butter and sugars until light and fluffy
Add in peanut butter, mixing until just combined
Add in eggs and vanilla bean extract, mixing until just combined
Mix in flour, baking soda & salt
Stir in oats, 1 cup M&M's (or any of the additional add-in's) and chocolate chips, dough will be very stiff
Using a small cookie scoop place dough onto prepared pan
Bake for 9-10 minutes or until cookies are just set
Immediately press a few more M&M's into cookies and sprinkle a little sea salt over cookies
Let cool for 10 minutes on pan
Remove to a cooling rack to cool completely
ENJOY!

Notes

You can freeze baked cookies, or balls of cookie dough for up to 3 months

To bake frozen dough - no need to thaw just add another minute to the cooking time

Spring into yummy

Whether you use the Spring M&M’s, the regular ones or another favorite addition these are for sure going to become one of your favorite cookies.   There is something for everyone in these cookies,  big and small.
