simple salmon closeAs I have said before simple really is sometimes the best way to go…and this simple salmon is definitely the best I have had in a while.  

The Hubby and I love salmon and we have had many different ways.  Some with sauces, such as this Lemon Caper Salmon, or some grilled like this Grilled BBQ salmon … but I have to tell you one of our favorites is just this simple salmon and this spice combo makes it AMAZING!!

The spices are simple, and you probably have them all on hand…and if you don’t you really should because they can make almost anything yummy…but anyway this simple combo adds just a hint of spice, saltiness and color while still letting the salmon be the star.  On a quick note about the color…I LOVE IT!!  I mean it just comes out amazing once the chili powder is roasted…and I just love it on this salmon (& really almost any protein)…but don’t worry it is not overwhelming in heat.

Simple Salmon

Simply roasted salmon that is perfect for a quick weeknight dinner...plus it is healthy making it an even better option

Ingredients

16 ounces skinless salmon fillets, divided into 4 oz pieces
Olive oil spray
2 teaspoons salt
2 teaspoons black pepper
1 teaspoon chili powder
1 teaspoon parsley flakes

Directions

Preheat oven to 400
Line a rimmed baking sheet with parchment paper
Place salmon onto parchment paper
Spray salmon with olive oil spray to coat each lightly
In a small bowl combine salt, pepper, chili powder and parsley flakes
Sprinkle evenly over each filet
Place into oven and roast for 12-15 minutes, until salmon is just cooked through, or to your desired doneness
Remove and let sit for 2-3 minutes before serving

If you wanted to add a bit of freshness to it you could drizzle some fresh lemon juice and zest to make it perfect for summer.  

I also love how quick this your whole meal can come together…serve this with a quick salad and my quick microwave green beans and you have a dinner that everyone is sure to love!!

This should become one of your go to meals for those busiest of nights!
