crispy without the guilt
Crispy & good without guilt sounds like a perfect dinner to me. Crispy with cheese & good sounds even better!!
About 6 weeks ago I had surgery and was not able to get around very well for several weeks. Finally about 3 weeks ago I could start getting back into the kitchen (much to The HUbby’s dismay) and the first thing I wanted to make was parmesan chicken.
OK, now if you know me at all this is not something that I would normally be craving, but after several weeks of food from restaurants and The HUbby’s cooking (which was really great) I wanted a parmesan chicken…I don’t know why, it is just what I was craving. The Hubby was rather excited about it, as parmesan chicken is his favorite anytime we eat Italian food, but me being me I had to make it a little different and it turned out so, so good.

To make it a little lighter I sprayed each chicken breast with olive oil instead of dipping it into an egg wash, and then I dipped it into seasoned bread crumbs that had some additional yummies added in for some extra flavor. It gives the chicken a light & crispy crust without a ton of fat from the breading. If you wanted to add in some additional herbs or spices you could…some fried basil, or additional italian seasoning, maybe even a hit of heat from some cayenne or chili powder to make it a little spicy…whatever you would love will work.
I served this with a salad and some roasted veggies for a light but very filling dinner. You could also definitely serve this with some red sauce and noodles for a more traditional parmesan chicken dinner.
