
let’s go…go…go for some oatmeal
Let’s talk about breakfast. Do you eat breakfast everyday? Do you LOVE breakfast or is something you have to do? Do you change it up or do you eat the same thing everyday? Are you always in a hurry in the morning and need something that is easy and already done when you wake-up? How about overnight oats that are ready when you get up?
For me I am eating breakfast everyday…NOW, but that has not always been the case. Breakfast is not something I LOVE or think about or crave but in the last few months all of that has been slowly changing. For the New Year I have been experimenting with some healthier breakfasts, and I have actually been really enjoying the changes and this overnight oatmeal has definitely been a favorite so far.
As you know (if you follow me) I LOVE pumpkin anything and these oats bring together all that I love about pumpkin pie with oatmeal for a great breakfast…and it is without a ton of guilt. Now I have always been an oatmeal fan but I have never tried overnight refrigerator oats but trust me there will be many more versions to come down the road. For this pumpkin pie one I used just a few ingredients to make it all come together with the spices and creaminess of a traditional pumpkin pie (even with a hint of crust). If you are not a fan of maple syrup you can use honey or some brown sugar, but lets be real why would you not be a fan of maple syrup…if you are not a fan please let me know why…I am very curious about that.

Mason jars are always in my kitchen (I buy them here) and they are my favorite way to make this oatmeal. They are the perfect size, and so cute plus they are kinda vintage which makes me happy the whole time I am eating this little delight. If you do not want to make the investment into a case of mason jars you can use anything with a tight fitting lid, but trust me I have found so many uses for all my mason jars…they really are a must have in my kitchen.
These oats are a perfect breakfast for on the go (or a lazy weekend brunch)…and make sure to keep checking back for other fun overnight oat recipes…this might be my newest obsession.
