Red Velvet Cookies with Cream Cheese Frosting

Red Velvet Cookies are the perfect sweet treat for Valentines Day… I mean it is just a few days away.  By the way…what are your plans for the sweetest day of the year?  I think these Red Velvet Cookies would be a GREAT option!!

Red Velvet Love!

I am a big, big red velvet fan.  I just love the hint of chocolate it gives you, but honestly it really is all about the color.  I just love how pretty red velvet is … for reals the deep red just makes me so, so happy.  

Speaking of the red color I personally like to use gel coloring.  I feel like you get a deeper, more intense color from gel colors.  If you do not have gel coloring that is all good, but if you do use it!!

Sugar Love

To make these cookies extra special I rolled each cookie in some course sugar.  I love the little bit of crunch it gives the cookies, and they also make them a little extra pretty.

If you do not have course sugar you can use regular granulated sugar and it will add just the right amount of extra sweetness to make these cookies something super special.

Sprinkles Galore!!

I am all about a fun sprinkle.  I have ones specific for each Holiday.  I always let me niece and nephew pick out their favorites at the store and then use those on their special cookies.  For Valentines I am all about the hearts, and anything red & pink.  This is where my girly side really comes out.

These cookies would also be super fun for the 4th of July, and use blue sprinkles and of course at Christmas.

Oh the Icing!!

A traditional red velvet cake always has a delicious rich & creamy cream cheese frosting, so for these cookies I decided to top them with a delicious cream cheese frosting as well.  

To make it extra special I added some vanilla bean paste to give it a little bit of extra yum.  If you look real close you can see the specks of vanilla bean in the frosting.

Ingredients

Red Velvet Cookies
1/2 cup butter, room temperature
2 ounces cream cheese, room temperature
1/4 cup vegetable oil
1/2 cup sugar
1/2 cup powdered sugar
1 egg
1 teaspoon vanilla extract
1-2 tablespoons red food coloring
2 1/2 cups flour
1/4 cup cocoa powder
1/2 teaspoon cream of tarter
1/4 teaspoon baking soda
1 teaspoon salt
Course Sugar for rolling cookies (optional)
Cream Cheese Frosting
8 ounces cream cheese, room temperature
1/2 cup butter, room temperature
2 tablespoons sour cream (or greek yogurt)
12 teaspoons vanilla bean paste
1/2 teaspoon salt
3 cups powder sugar
Decorations
Seasonal Sprinkles (optional)

Directions

Preheat oven to 350
Line baking sheets with parchment paper, set aside
In the bowl of a stand mixer cream together butter, cream cheese until light & fluffy
Add in oil, sugars, egg and vanilla mixing until well combined, scraping down the sides as needed
Add in red food coloring and mix until well incorporated
Add in flour, cocoa powder, cream of tarter, baking soda & salt
Mix until just combined and no flour streaks
Using a cookie scoop roll cookie dough into balls and then into course sugar (if using) and place on prepared cookie sheet
Using a glass cup press cookies down until about 1/4 inch thick
Bake for 8-10 minutes or until edges are just set
Remove and let cool on pan for 5 minutes and then move until cooling rack to cool completely
Once cookies are cooled it is time for the frosting
In the bowl of a stand mixer whip together all frosting ingredients until light and fluffy
Tasting and ad more powder sugar if needed
Spread onto cooled cookies and top with sprinkles
Serve & ENJOY!!
