A Cake to Remember!

My niece and I love to bake together, and for the last year or so we have been perfecting this Molten Cake recipe and let me tell you… it is PERFECTION!

Break out the Ramekins

I don’t know about you but I have a ton of cute little ramekins hanging out in your cabinets… and I desperately want to use them.  But what could I use them for?  Then my niece asked about lava cakes. 

HECK YES we can make lave cakes ma’am!  I am 100% in and let’s go! 

Oooey Gooey Goodness

The beauty of Molten/Lava Cakes is the center.  Is there anything better than breaking through the top and seeing a sea of ooey gooey goodness waiting for you?  I don’t think so… and neither does my niece.

We have made these cakes several times but finally we have perfected them.  They are not too sweet, but sweet enough and just perfection!

Serve it Up!

The cakes are best served immediately, but they can be reheated if need be.  For me personally I like to keep the decorations simple, but my niece well she has different ideas.  As you can see below she went all out with my Valentines M&M’s and sprinkles and I have to admit they turned out pretty amazing. 

However you decorate them I promise they will be SO GOOD!

Rich, gooey goooey chocolate Molten Lava Cakes that will make any occasion super special.

Ingredients

  • 8 oz semi-sweet chocolate, chopped

  • 10 tablespoons butter, cut into cubes

  • 3 eggs, large

  • 3 egg yolks

  • 1/2 cup sugar

  • 1 teaspoon salt

  • 1 teaspoon vanilla bean extract  (vanilla extract)

  • 1/4 cup gluten free flour (or all-purpose flour)

Directions

  • Preheat oven to 350

  • Spray 8 ramekins with non-stick spray and set onto a sheet pan

  • In a large measuring cup, or microwave safe bowl, melt chocolate and butter in 30 second increments, stirring often until just melted and smooth  - set aside to cool for a bit 

  • In the bowl of a stand mixer, with a whisk attachment, whip together eggs, egg yolks, sugar, salt & vanilla until light and fluffy (about 4 minutes)

  • Slowly drizzle in chocolate mixture, scraping down the sides as needed

  • Add in flour and mix until just combined 

  • Using a cookie scoop (that is what my nice says is a must) divide batter evenly into each ramekin

  • Bake for 10-12 minutes, or until center just stops being jiggly (My nieces description)

  • Remove and let cool for 5 minutes and then top with powder sugar, whipped cream, berries or M&M's and sprinkles 

  • ENJOY!!

Options

  • You can top with powder sugar, whipped cream, berries or any seasonal candy you would like
