  • Garlic Butter Asparagus

OK…I am not going to lie to you and tell you I love asparagus…but everyone in my family does and they LOVE this Butter Garlic Asparagus.      Quick and Easy I am a big sides girl.  I have been known to only eat the sides, especially around the holidays.  Growing up my mom always made the best sides.  Whether it was a potato dish (like these mashed potatoes), a veggie (like these brussels sprouts) dish, or even a rice dish she always made it delicious.   One thing I always loved about my moms side dishes is that they were always fast, and this asparagus is super fast. All…

  • One Bowl Chocolate Chip Cookies

I am not sure there is anything much better than warm chocolate chip cookies straight out of the oven.  I mean, there are a few things, but not much.  To make them even better how about making them all in one bowl and not chilling time….yep it is now better for sure. Scoop-i-dy Scoop Scoop One of my favorite tricks to make all my cookies the same size, so they all cook the same way is to use a cookie scoop.  I understand not everyone my have a handy cookie scoop laying around but don’t worry.  You can use a melon baller, a small ice cream scoop or a tablespoon…

Are you a fan of a good blondie?  Well I am and I especially love them when there is something a little different about them, like some espresso and chocolate.  Trust me these are the perfect little pick me up you need for this week. Not your basic blondie Are you a basic blondie fan or an amped up blondie fan?  Well, for me I am all about the amped up version.  This time around I decided to add in two of my favorites…espresso and chocolate.  Yes, espresso and chocolate. • Balsamic Brussels Sprouts

As you all know I am a BIG, BIG fan of Brussels Sprouts.  I love them roasted, with a hint of lemon, love them crispy, I even love them raw and in salads.  This version though is a new FAVORITE and I have already made them 2 times since I first made them….they are that good. A little tangy surprise I am all about a little tang.  I love how it awakens my taste buds and gets me excited for the next bite.  One of my favorite ways to bring a little tang into a dish is with balsamic vinegar…it is just so good. I use a balsamic reduction (much like…

Happy Garlic Day!  To celebrate I waned to share one of our new favorites…Creamy Garlic Chicken & Potato Bake.  It is loaded with tons of flavor and comes together pretty quick too. It just makes me happy… I love a dinner that can all be prepared in a couple of pans and it is loaded with a ton of flavor.  This dish is all that and more.  It has super juicy chicken, tender potatoes and a little spinach (you know so it is healthy) and a rich garlic cream sauce making it SOOOOO good. They are just so pretty! Not only are they cute, but they are…

  • Chicken Enchilada Casserole

Is there anything better than a casserole on a busy weeknight?  In my world I am all about a super easy casserole any time, but especially on those busy nights.  Even better when it is an enchilada casserole! All in one… One of the best things about a casserole is the fact that everything is all packed into on dish.  There are typically fewer pans to clean up, it serves a lot of people and there is something just so comforting about a casserole.  This enchilada version is all that and more. There is chicken, beans, rice, cheese and a little heat in each bite, just like your favorite enchiladas.…

  • MeeMaw’s Chicken n Dumplings

These last few weeks have been pretty trying.  When I am under stress I tend to eat comfort food and one of my favorites is my MeeMaw’s Chicken n Dumplings.   Thankfully things seem to be calming down a bit and getting back to “normal” but I am still craving my favorite dish. Super simple Growing up I was not a fan of veggies.  I would sometimes eat a green bean here and there but not much else.  My MeeMaw being the best EVER never made us eat veggies.  When we were at the farm she would make us anything we wanted and this was always my must have.  …
