Cream Cheese Sugar Cookies

Sugar cookies are one of my most favorite sweet treats.  I love the thinner, crispier ones and the soft pillowy (lofthouse) style ones and I love the frosted version.  Sugar cookies are the perfect treat for any occasion…these are a must make.

Get Creative 

I beauty of these cookies is you can use whatever sprinkles you want or change the color of the icing to anything you want.  You really can be as creative you want.  

For this go around I decided to use up all the left over sprinkles I had laying around.  I have to be honest I loved the variety…a little something for everyone.

Ohhhh the icing!

For these Sugar Cookies I used a traditional Cream Cheese icing.  I love the bit if tang the frosting adds.  If you are not a cream cheese icing fan you can use your favorite buttercream…or even your favorite canned frosting.

I went with mainly white frosting but for the kids I divided the frosting up and used gel food coloring for deep colors that I knew they would love.  Look how great their creations came out!

Anytime I can put a smile on their face it makes my day.

 

Plain is ok too

My mom is not a fan of any icing, even on cake really, so I made a few without icing for her.  She said they were one of her most favorite cookies EVER!

Cream Cheese Sugar Cookies

Cream Cheese Sugar Cookies are my new favorite cookie. They are not too sweet, but sweet enough and once topped with this super easy cream frosting they really are the perfect cookie.

Ingredients

Cookies
3 cups flour
1 1/2 teaspoons baking powder
1 teaspoon salt
1 cup butter, room temperature
2 ounces cream cheese, room temperature
1 cup sugar
1 egg
3 teaspoons Vanilla Bean Paste , or vanilla extract
1/2 cup sugar, for rolling cookies
Cream Cheese Frosting
6 ounces Cream Cheese, room temperature
1/4 cup butter, room temperature
2 teaspoons Vanilla Bean Paste , or vanilla extract
Dash of salt
1 1/2 - 2 cups powder sugar
Spinkles for decorating

Directions

In a medium bowl whisk together flour, baking powder and salt
In the bowl of a stand mixer cream together butter & cream cheese until smooth
Add in sugar, mixing until well combined, scraping down the sides as needed
Add in egg and Vanilla Bean Paste , mixing until just combined, scraping down the sides as needed
Slowly add in flour mixture, mixing until just combined, making sure to not over mix
Cover dough and chill for at least 1 hour, up to 2 days
WHEN READY TO BAKE
Preheat oven to 350
Line cookie sheets with parchment paper
Using a small cookie scoop, roll cookie dough in sugar and place onto cookie sheets, 2 inches apart
Using a glass or a flat bottom measuring cup flatten cookies down to 1/4 - 1/2 inch thick
Bake for 13-15 minutes, or until edges just begin to brown
Let cool on cookie sheet for 5 minutes and then move to a cooling rack too cool completely
When cookies are cool top with Cream Cheese Frosting & sprinkles
TO MAKE FROSTING
In the bowl of stand mixer or a large bowl cream together cream cheese, butter, Vanilla Bean Paste and salt until smooth
Slowly add in powder sugar until desired consistency is reached
Using a pastry knife or spoon top each cookie with desired amount
Sprinkle with sprinkles of your choice
** For colored frosting, divide frosting into smaller bowls and add in a drop of gel food coloring, and stir adding in more until desired color is reached

Notes

These cookies are perfect for any time fo the year and can be personalized with icing colors and decorations
