Like no Brownie (Pie) I have ever had

Brownies are a favorite in our house.  I have made almost every brownie version imaginable.  One of our favorites are these Oreo Caramel Brownies and these Pumpkin Caramel Brownies are a perfect option for this Thanksgiving.  Oh but wait there is so much more to brownies now.

It is Pie time…

Pie is a must have at our Thanksgiving celebrations.  Do you have pie for Thanksgiving?  What kind are a must?  Pumpkin, sweet potato, apple?

In our family there is always a fruit pie of some sort, a pumpkin pie, and normally a pecan pie (I never said we were very exciting).  This year though I wanted to shake things up a bit and decided to have a new pie, a Brownie Pie.

A Brownie Pie?

Yes, you read that right.   Everything you love about brownies is in this pie, plus you get crust.  In my world that sounds like the most perfect dessert EVER!!

It is fudgy, rich, decadent with a little crust in each bite making it delicious. I threw a little surprise in there as well.  I added in just a bit of espresso powder…don’t worry no one will know.  It really just intensifies the chocolate flavor, making this a chocolate lovers dream pie.

Change it up a bit

I went with a straight chocolate brownie, but you could change it up a bit if you wanted.

For the peanut butter lovers, you could add in some peanut butter chips, or a swirl of peanut butter right in the pie.

Are you a caramel fan, swirl in some salted caramel after you add the batter to the pie pan and then sprinkle with a little sea salt.

For Christmas add in some white chocolate chips and some crushed up candy canes for a perfect Holiday pie.

Ingredients

1/2 cup butter
3 (1 oz) squares bittersweet chocolate, chopped
3 (1 oz) squares semisweet chocolate, chopped
4 large eggs
3 tablespoons corn syrup, light
1 cup sugar
1/2 cup, packed brown sugar
1/2 teaspoon salt
1 teaspoon vanilla extract
1 teaspoon espresso powder (optional)
1 Pie Crust (homemade or store bought) for a 9" pie pan

Directions

Preheat oven to 350
In a medium saucepan melt butter over medium heat
Stir in chocolate until it is just melted, then remove from heat
In a medium bowl whisk together eggs, corn syrup, sugars, salt, vanilla & espresso powder (if using)
Pour chocolaté mixture into egg mixture, whisking until just combined
Line pie plate with crust (if using store bought make sure it is thawed)
Pour batter into prepared pie pan
Bake for 30-25 minutes or until pie is just set
Remove and let stand for 30-45 minutes before serving, to allow air to set up
Serve & ENJOY
** Store covered in refrigerator for up to 3 days
