I LOVE, LOVE, LOVE risotto. I love how decadent, rich and full of flavor it is. Traditional risotto (like this recipe) is not KETO friendly but when you use cauliflower rice it becomes VERY KETO friendly. Ok it is official I am a LOVER of Cauliflower. I love this Chicken and Cauliflower Casserole and the Mexican Cauliflower Rice but this loaded casserole is my FAVORITE!
