Garlic Parmesan Sweet Potatoes
Oh hello, sweet potatoes. I am always down for some sweet potatoes and especially these!! Sweet Potatoes = Yummy There is just something so yummy about sweet potatoes. I love them baked, roasted, alone, stuffed (like this BBQ stuffed version), in salads, in breakfast hash, as a side, as the main… ANYWAY really. One of my favorite recipes for sweet potatoes are these Garlic Parmesan Sweet Potatoes. They are not only delicious but also super easy. Roasted and So Good! If I am not eating a whole sweet potato or mashed ones, I roast them. I roast them for several reasons. First, I love how it intensifies the flavor of…

Sausage Dressing – Thanksgiving Must
Sausage Dressing is hands down our families favorite dressing. How do I know?? After 4 dressings, a blind taste test and an overwhelming vote… the winner has been named!! At least one election is for certain in 2020. Changing a Texas Girl’s World Being a good Texas girl I grew up eating cornbread dressing every Thanksgiving. The very traditional version of cornbread with onions, celery, and cornbread. My mom would bake the cornbread days in advance and prep anything she could to make her cornbread dressing. This Texas girls life was changed though a couple of years ago, I was introduced to bread and sausage dressing and it changed…

Mexican Street Corn
The Holiday weekend is almost here and I am busy thinking about all the yummies I am going to fix. One dish I know for sure is this Mexican Street Corn Salad. It is a perfect side for this Holiday weekend. It is so much more than corn Ok, obviously corn is a HUGE part of this dish but that is not all there is to it. There is also lime, cheese, herbs, chili powder, sour cream…and a few more things. Let me tell you it all comes together to create a delicious corn salad, that you can serve warm or chilled, that everyone is sure to LOVE!! It…

Cranberries & Holidays = Magic
It is time to bring on the cranberries!! I don’t know about you but the side dishes are really my favorite part of my Holiday table. They are also my favorite left over…and these green beans are among my MOST Favorite. As I have mentioned before, the only veggie I would eat growing up was green beans. My family was not one of those that you had to finish everything on your plate before you left the table, but if green beans were on my plate I would finish those for sure (I would also finish my potatoes, but now I know they weren’t veggies). For the most part we ate green beans either…

KETO Broccoli & Cauli Casserole
This KETO Broccoli and Cauli Casserole is hands down my most favorite side I have made since on my KETO journey. I am a HUGE fan of broccoli and I am becoming a big fan of cauliflower so bringing the 2 together is perfect! Load it Up One the first side dishes I made when I started my KETO path was my Loaded Cauliflower Casserole. It is still one of my favorites and I make it often, but this Broccoli and Cauliflower Casserole is definately my new go to. To amp it up a bit I used sour cream, ranch seasoning and mayo. This combo adds a creaminess to…

Skillet Brussels Sprouts and Bacon
Skillet Brussels Sprouts and Bacon are the perfect quick side for dinner tonight. Literally can be ready in 20 minutes! KETO baby! I love this side not only because it is Brussels Sprouts (which I LOVE) but it is also KETO friendly, oh yeah and there is bacon. I mean I am not sure it can get any better than sprouts, bacon, butter and super quick and easy. PS… The flavor is AMAZING! One pan and done I love when a dish is made all in one pan, and this time was all about the skillet. First you fry up the cut up bacon and then quick sauté the sprouts…

Jalapeno & Cilantro Coleslaw
Truth time…I have never been a fan of coleslaw. I can actually count on one hand the number of times I have had coleslaw. When my Godmother said she was going to make some I was not super excited to say the least. Well… that all changed the minute I tasted it. Jalapeño & Cilantro Coleslaw is now one of my most favorite summer sides! It is all about the prep When SandyJones, my Godmother, said she was going to make coleslaw I just figured we would buy a bag of slaw and go from there…well I was WRONG. She bought a head of cabbage and cut that bad boy…

KETO Cauliflower Risotto
I LOVE, LOVE, LOVE risotto. I love how decadent, rich and full of flavor it is. Traditional risotto (like this recipe) is not KETO friendly but when you use cauliflower rice it becomes VERY KETO friendly. One skillet is all you need The beauty of risotto is that it is typically made all on one pan. This makes it a perfect side dish for a busy weeknight or lazy weekend. This time around I went with a simple parmesan risotto but if you wanted to add in some mushrooms or bacon you would cook them in the skillet before you add in the cauliflower rice. This way the…

Pimento Cheese Spread
A MUST MAKE (& it is KETO friendly) Pimento cheese is very special to me. My MeeMaw always made the most amazing pimento cheese. She always had it for us every time we came to the farm.It was always so rich and creamy. Maybe I love it it is because she made it or maybe it is the cheese but whatever it is I DO SO LOVE IT! To make this favorite even better it is KETO/Low Carb friendly. Not only is it a favorite but I can enjoy it anytime I want while sticking to my KETO lifestyle. Now that is a WIN WIN! A Master’s Tradition Pimento cheese is also special because it is one…

Loaded Cauliflower Casserole
Ok it is official I am a LOVER of Cauliflower. I love this Chicken and Cauliflower Casserole and the Mexican Cauliflower Rice but this loaded casserole is my FAVORITE! Roasting is key There are a ton of loaded cauliflower casseroles on pinterest and they all sound amazing but for me cauliflower is at its best when it is roasted. I love the little bits of charred cauliflower with the cheese and bacon in this casserole. The extra step of roasting adds another layer of flavor this already delicious casserole. Bacon, please A loaded casserole would not be loaded without the addition of bacon. Right? I mean the best loaded baked…
