Lemon Quinoa

Are you a quinoa fan?  Well, I am …. I am a BIG, BIG fan.  I love it in a salad, paired with chicken or salmon or with yogurt for breakfast.  One of my favorite quinoa recipes is Spanish Quinoait is perfect for Taco Tuesday… but my new favorite is this Lemon Quinoa which is perfect for summer!

Quinoa for All…

Now I know not everyone is a fan of quinoa, but this recipe might just change their mind.  It is loaded with tons of flavor.  There is a lemon in each bite, making it light and refreshing.  With the arugula you get a bit of peppery bite, which I love with the lemon and then the parmesan brings it all together with a little salty surprise.

Truly each bite really is just about perfect.

If you are not an arugula fan, no worries.  You can use spinach, kale or even a spring green mix.  

Quick and Easy

One of the best things about quinoa is how quick it can made.  This dish start to finish is ready in under 25 minutes.  Yes you read that right, less than 25 minutes.

I don’t know about you but anytime I can get a side ready to go in less than 30 minutes I am already a fan before I ever ty it.

Lemon Quinoa

A quick, healthy and delicious side that will turn anyone into a quinoa fan.

2 cups chicken stock (you can also use veggie stock or water)
1 cup tri-color quinoa, rinsed
2 garlic cloves, minced
1 teaspoon salt
1 teaspoon pepper
1 lemon, juiced
2 cups arugula, rinsed
1/4 cup grated parmesan cheese (optional)


In a medium saucepan bring stock to a boil
Stir in quinoa, garlic, salt & pepper
Cover and reduce heat to medium, cooking until quinoa is tender and most of the liquid is gone, 15-18 minutes
Remove from heat and stir in lemon juice, arugula and cheese (if using)
Serve Immediately
