Quick Black Beans

Do sides ever stump you when your planning for dinner?  They do me.  I get bored with roasted veggies, mashed potatoes or a simple salad.  I love beans but to make beans from scratch takes forever and rice, well rice can get boring as well.  

Do not fear though…I am taking canned beans (which can be pretty bland) to the next level…and it is SO EASY!

30 Minutes and DONE

Making beans from scratch takes several hours, but these black beans only take 30 minutes.  Yes, 30 minutes is all you need to make this delicious side dish.  There is a little bit of heat, a ton of flavor and so many options.  

You can amp up the spice, or bring it down if spice is not your thing.  You can add in some additional flavor with additional herbs and spices or you can keep it simple.  So many options!

Toppings, Galore

You can serve the beans on the side of your favorite tacos (for Taco Tuesday), flautus, fajitas, or chickenYou can top them pico de gallo (as shown before), or with fresh cilantro, some sour cream or shredded cheese.  

The possibilities are really endless.

A quick and easy side perfect for dinner tonight!

Ingredients

2 teaspoons extra virgin olive oil
1 small onion, chopped
3 garlic cloves, minced
2- 15 oz cans black beans
1 teaspoon taco seasoning
1/2 teaspoon cumin
1/2 teaspoon dried cilantro
Fresh cilantro (optional)

Directions

In a medium saucepan heat olive oil over medium heat
Add in chopped onion and cook for 4-5 minutes or until onions are softened
Stir in minced garlic and cook for another 1-2 minutes
Stir in black beans (do not drain them), taco seasoning, cumin and dried cilantro
Cook for 10-15 minutes, taste and adjust seasoning as needed
Serve with fresh cilantro (if desired)
ENJOY!
