This Instant Pot Beef enchilada Soup is the perfect Fall dish…even though it is 86 and humid here I am pretending it is fall outside my window. Instant Pot Time If you know me you know I am a big fan of my Instant Pot. Bacon Cheeseburger Casserole (KETO/Low Carb)
Who doesn’t love a good casserole. I know I do. They are my comfort food and this Bacon Cheeseburger has everything a good casserole should have, and then some. Bacon, please This casserole all starts with bacon. I used 1/2 lb of bacon and cut the strips into small pieces and then cooked it all in a large skillet. If you leftover bacon you can use it, but I love how the bacon flavor becomes the base of the casserole when you cook it in the same skillet as the meat. The bacon adds so much flavor and really elevates this casserole to the next level. My moms hamburger casserole…

Pumpkin Butter Cookies (KETO/Low Carb Friendly)
Happy Fall!! I cannot believe it is almost October! To celebrate I made KETO friendly Pumpkin Butter Cookies and they are AMAZING! The perfect Fall cookie One of my biggest fears going on KETO was missing out on the sweets. To be honest I do not have a big sweet tooth but I do like a little something sweet here and there. A couple of friends suggested I make “fat bombs” immediately and I did and I love them (I will post a recipe for those soon) but the last few days I have been craving a cookie or cake…specifically pumpkin cookies or cake. Thankfully I adjusted a favorite recipe…

Pork Medallions with Creamy Mushroom Sauce
I think this is the first time the word mushroom has been in the title of any post I have EVER made. It was not until a month or so ago that I even started eating them…and now I LOVE THEM, and they are perfect in this dish! Pork & Mushrooms While I was at the store the other day I came across a beautiful pork tenderloin. Now I am a big pork tenderloin fan, but I wanted to make a one skillet dinner so i decided to cut the tenderloin into medallions. Not only did it make the cooking time minimal, it also made for super tender little chunks…

Crispy Cheese Chips
To all my KETO/Low Carb friends do you ever find yourself craving something crispy like a chip? Well, I don’t know about y’all but I do. To help meet the craving I started searching for low carb chips and kept seeing these cheese chips and I had to give them a try. So Crispy Even though everyone online kept talking about crispy these “chips” were I just had to find out for myself. When I went to the store to get the cheese slices I found a party pack of pre-sliced cheese and I grabbed it right up. It had cheddar, havarti, colby and gouda. I was so excited to…

Is there anything more decadent than a perfectly cooked steak? It makes any meal feel a little more special, something to savor, but it can also be time consuming and hard if you can’t grill… don’t worry I have the perfect fix. This Roasted Beef Tenderloin is as good as any grilled steak and is so easy you won’t believe it. 5 ingredients and DONE Anytime I see a beef tenderloin on sale I grab one. The meat is super tender, it is the filet part of the steak. It cooks quickly and freezes beautifully. I love having one in the freezer for any special occasion that might pop up…you…

Creamy Chicken and Cauliflower Rice Casserole
Ok everyone…Today is THE DAY. Today is the day that I started my KETO journey. And today is also the FIRST time I have ever had cauliflower rice…it is a VERY BIG DAY peeps! So why KETO? There are 2 main reason why I am jumping onto the keto train. First is for me. I have always struggled with my weight and in the last year I have become even more motivated to get it under control, being back in the dating world will do that to you. I have a really good friend who started this journey a few months ago and has had tremendous success, I am so…

Grilled Fish
In the past year I have become OBSESSED with fishing. There is nothing like being on the water with a fishing pole in my hand. I don’t even care if I catch a fish, I just love being out there. Now trust me it is SUPER FUN to catch a lot (see below) but I love it regardless. Just a Few… This summer some of my girlfriends and I hosted a fishing tournament of girls vs guys. Needless to say the girls won, I mean look at the fish we caught, and we had the best time ever. It would not have mattered if we caught anything, I…

Pumpkin Sugar Cookies
September is in full swing and that means it is Pumpkin Spice Season…right? To celebrate everything pumpkin, I had to make these Pumpkin Sugar Cookies. They are my new favorite sugar cookie!! Not too much Pumpkin Ok I know that sometimes pumpkin spice can over power everything and become too much, but not in these cookies. There is just enough hint of spice, without being in your face pumpkin pie spice. If you wanted more spice you could add in an additional 1/2 teaspoon of cinnamon to make them more like a pumpkin snickerdoodle. Grab a glass This cookie batter does not spread so it is important to press…

I’m in love with pumpkin and I L.O.V.E. dark chocolate even more and I love them together. I first had this combo last fall in a muffin, and it was so good I decided to run with it in a bundt cake. I love the spice and the chocolate together. The bitterness of the dark chocolate really helps to…
