beef fajita skewer-hWho is ready for grilling season…I AM!!  There is just something so great about getting outside and cooking over an open fire (or having The Hubby do it) and experiencing the great flavors that come with it.    It just seems to make everything taste better, even the stuff that isn’t cooked on the grill….and especially these fajita skewers.

Living in SE Texas definitely has its perks and one of the big ones is almost year round grilling and these fajita skewers are a must make.  Fajita’s are a favorite when we go out to one of our favorite Tex-mex restaurants but they can be loaded with extra fat and calories that are not needed, but these skewers give you all the best flavors from traditional fajitas without the guilt.  

To start with I used chicken and beef both, on separate skewers, but I like having one of each.  The seasoning is similar on both but just tweaked enough to really let the individual flavors stand out.  Next I used a ton of peppers and onions, which is a must have in my fajitas, and I LOVE them cooked on the grill.  There is just something so good about a pepper or onion that has been charred just a little…they get a little sweet and when paired when the spices they are perfect on these skewers.  You could also use shrimp on the skewers which would make them even lighter but still SO GOOD!

Ingredients

For the chicken skewers:
12 oz boneless, skinless chicken breast, cut into equal bite size pieces (12-16 pieces)
1 tsp extra virgin olive oil
2 tsp salt
2 tsp pepper
2 tsp chili powder
1 tsp garlic powder
1 tsp cumin
1 tsp dried cilantro
1 bell pepper, chopped
1 onion, sliced
1 zucchini, chopped
1 tsp extra virgin olive oil
1 tsp salt
1 tsp pepper
1 tsp garlic powder
For the beef skewers:
12 oz New York Strip Steak, cut into equal bite size pieces (12-16 pieces)
1 tsp extra virgin olive oil
2 tsp salt
2 tsp pepper
2 tsp chili powder
1 tsp garlic powder
1 tsp cumin
1 bell pepper, chopped
1 onion, sliced
1 zucchini, chopped
1 tsp extra virgin olive oil
1 tsp salt
1 tsp pepper
1 tsp garlic powder

Directions

Cut meat into bite size pieces and place into a large zip closure bag
Drizzle olive oil over meat and toss to coat
In a small bowl combine salt, pepper, chili powder, cumin & cilantro (for chicken) and sprinkle over meat
Toss to coat
Place in refrigerator and let marinade for at least 30 minutes, up to 2 hours
While meat is marinading cut veggies into bite size pieces and place in a large bowl
Drizzle olive oil over veggies and toss to coat
Sprinkle salt, pepper and garlic powder over veggies and toss to coat
To make skewers:
Preheat grill to medium-high heat
Layer meat and veggies onto skewers (if using wood skewers, let soak in water while meat marinades) in any order you prefer - I separate chicken and beef as their cooking times will vary
Place skewers onto grill and cook for 3-4 minutes per side, until desired doneness is reached
Serve on their own, with tortillas or rice with your favorite salsa or the Avocado Cilantro Cream

If it is not grilling season in your part of the world just yet, you could easily make these inside on your favorite grill pan, it will be great as well.
