Pumpkin Spice and Everything Nice

I cannot believe it is already November 1st!  This year has flown by…before we know it we will be thawing out the turkey and making cranberry sauce.  As fun as that will be I am still all about everything pumpkin spice and these cookies are all I can think about right now.

A simple but perfect cookie

These simple butter cookies are a favorite of my family.  This is the only cookie he ever asks me for.  You can check out the original recipe here.  As much as I love the original version I wanted to update it a little for fall, and pumpkin spice was the only option I could think of.  

I mean is there anything more fall than pumpkin spice?

Options are good…

The beauty of these cookies that you can roll them in any sprinkles you want or leave them bare (as my mom likes them) making them a perfect holiday cookie.  For Fall I went with my favorite leaf sprinkles and then some orange and purple sprinkles.  Both were so fun and perfect for Fall.

You could also use chocolate sprinkles, mini m&m’s or your favorite fall inspired sprinkle combo.

Pumpkin Spice Butter Cookies

Spiced butter cookies that are a perfect Fall treat.

Ingredients

2 cups butter, softened
1/2 cup sugar
1/2 cup, packed brown sugar
2 teaspoons Vanilla Bean Paste (or vanilla extract)
4 teaspoons baking powder
2-3 teaspoons pumpkin pie spice (to taste)
1/2 teaspoon cinnamon (optional)
4 cups all-purpose flour
6 tablespoons evaporated milk
1-2 cups fall sprinkles of your choice

Directions

Preheat oven to 325
Line cookie sheets with parchment paper, set aside
In the bowl of a stand mixer cream together butter and sugars until creamy
Add in vanilla bean paste, scraping down the sides as needed
Add in baking powder, pumpkin pie spice and cinnamon (if using), scraping down the sides as needed
Alternate adding in flour and evaporated milk, making sure to mix until just combined and mixture comes together
Using a small cookie scoop roll dough into small balls
Roll in the sprinkles of your choice
Place onto prepared pan and gently press down with the back of a spoon or your hand
Bake for 17-19 minutes, or until edges just begin to brown
Remove and let cool on cookie sheet for 5 minutes and then move to a cooling rack to cool completely
Serve & ENJOY!!
Store in an airtight container for up to 5 days

Notes

Add in additional pumpkin pie spice, cinnamon or other spices as you desire

The Go To

Not only are these cookies delicious but they are also so easy to make.  There is no chilling needed (which I love) and make 4 dozen making them perfect for sharing.    I normally make 1 dozen for my nephew, 1 dozen for my niece, 1 dozen for my mom and then 1 dozen for all the rest.  

Break out the sprinkles and let your creativity go with these delicious fall inspired butter cookies.
