• MeeMaw’s Chicken n Dumplings

These last few weeks have been pretty trying.  When I am under stress I tend to eat comfort food and one of my favorites is my MeeMaw’s Chicken n Dumplings.   Thankfully things seem to be calming down a bit and getting back to “normal” but I am still craving my favorite dish. Super simple Growing up I was not a fan of veggies.  I would sometimes eat a green bean here and there but not much else.  My MeeMaw being the best EVER never made us eat veggies.  When we were at the farm she would make us anything we wanted and this was always my must have.  …

  • Balsamic Chicken Tenders

Chicken tenders are one of my most favorite proteins to cook.  They are quick, easy and you can do just about anything with them, making them a perfect weeknight dinner option. Amping them up a bit I am a fan of a simple grilled chicken tender, or breast or thigh, but when you can marinade and glaze with something a little special I am an even bigger fan.  The added flavor from the balsamic reduction adds just enough of that something extra to make these chicken tenders something to remember. They balsamic vinegar brings a bit of tang while the brown sugar gives a bit fo sweet in each bite.…

  • Sandy’s Chicken Piccata

I am a BIG piccata fan.  I like Salmon Piccata, Chicken Piccata, or even just the Piccata sauce over noodles.  I just love it all.  I honestly don’t know if it is the capers, the lemon or both…but I love it. A Quick Dinner Option I know that dinner during the week can be quite the chore.  You get home from work, school or practice and everyone is starving and honestly your just wishing you went through the drive thru instead of having to get dinner made.  I feel your pain, I have been there plenty of times.   I have good news…this chicken piccata comes together super quick and…

  • A new way to stuff a tater…

One of my favorite meals at almost any of our local BBQ joints is a stuffed baked potato.  I like to stuff the tater with brisket, or chicken or even sausage, just depending on my mood or the place.  This past week My sis-in-love decided to whip up some BBQ Chicken in our new Instant Pots and then I decided to try something super fun.   All in one… What I am learning about the Instant Pot is that it really is an all in one magic cooking machine.  You really can put everything you want for dinner in it and it all magically cooks to perfection  I know it…

  • Instant Pot Green Chile Enchilada Soup

Yep, I jumped on to Instant Pot bandwagon over the Holidays….and let me tell you I am loving it.   Not only does it cut down on cooking time in general, it is fun.  Yes I said fun.  You literally can cook almost anything in there and it turns out amazing. Delicious and Easy I am a big fan of soup, especially on cold winter days and now I even love soup more.  Making soup in the Instant Pot makes it super quick and easy, and OH SO GOOD!  Even better it doesn’t take too many ingredients to make this recipe so, so good. What I have found as I…

  • It’s time for a FIESTA

I don’t know about y’all but I am ready for a little Fiesta.  This Fiesta Chicken is a party in your mouth!! The good news about this meal is it seems quite indulgent but it really is quite healthy….now thats a win! It’s just so pretty I love it when food comes out looking pretty, I really do think it makes it taste better.  Have you ever thought about it?  If something looks good…it just seems to taste good (unless it has bananas in it).  For this dish the pretty not only comes from the salsa on top but also the browned chicken…it really gets some great color on it…

  • One Pan Harvest Dinner = Dinner TONIGHT

It is time to celebrate everything Fall & Harvest.  Thanksgiving is a few weeks away, the weather is cooler, boots are a part of our everyday wardrobe, pumpkin spice is everywhere and sweaters are back in the rotation.  This is hands down my most favorite time of year. Speaking of Pumpkin Spice Pumpkin spice is not just for your lattes or pumpkin bread…it is perfect on veggies and chicken.  Yes I said veggies and chicken.  I know that may not sound normal or even that good, but it really, really is so good. It adds a little something extra to make it perfect for Fall.  It has just the perfect…

  • Honey Soy Chicken & Rice

As the country celebrates the promise of Fall, here in SE Texas we are recovering from Hurricane Harvey   Thankfully my family is safe and dry but so many others around us are not.  If you want to help support to disaster relief you can donate here or to the American Red Cross.  Anything you can give will be used to help bless a family. Not your Momma’s Chicken n Rice I am all about comfort food.  There is nothing better than a good roast, or chili or casserole.  It is like a little hug with each bite.   Growing up one of my mom’s go to comfort food dishes was chicken n rice.…

  • bringing some fireworks to the dinner table

Chicken is a staple on my dinner menu.  It is quick, easy and lean…but sometimes it can be kinda boring…that is until now.  Firecracker Chicken is the perfect dinner option for tonight. One pan (& a bowl)…done Not only is this chicken super yummy, but it is also super easy.  All you need is a bowl to whisk the sauce together and then an oven safe skillet and voila your done.     I don’t know about you but that makes me a happy girl. A spicy as you want Being that the name is Firecracker Chicken there is a bit of heat in this chicken dish, but you can…

  • A whole new way to Fajita

I could literally have a fajita, of some sort, for every singe meal.  Yes for breakfast, lunch and dinner and maybe even a snack.  As much as I love fajitas, sometimes I just don’t want to take the time to fix them…well that is until now. Peppers and Onion…OH YEAH! One of my favorite parts of any fajitas are the peppers and onions.  I just love the little charred bits and the hint of sweetness and a little spice in each bite.   Even better they add a ton of flavor to the meat, in this case chicken, which makes them a must have in all my fajita dishes. Careful…
