Lemon Parmesan Skillet Chicken & Cauliflower Rice

Happy Tuesday.  This Lemon Parmesan Skillet Chicken & Cauliflower rice is the perfect quick fix dinner for the busiest of weeks.  I don’t know about your week but it has already been a crazy, crazy week in my world and this one pan dinner is definitely on my menu this week.  

PS… It is also very KETO friendly with only 5 net Carbs per serving.

It’s all about the coating!

This dish all starts with this amazing coating you press the chicken into.  It is super simple, just parmesan cheese, seasoning and garlic.  Yep… it really is that simple.  The parmesan cheese and garlic gives the chicken so much flavor without all the carbs of a more tradition bread crumb coating.  

Don’t worry though you will not miss the carbs AT ALL.. I promise!

OH THE RICE

This cauliflower rice is loaded with tons of flavor.  It picks up flavor from the chicken but then you add in the lemon juice and some extra parmesan cheese to really make this rice AMAZING!  My mom said the rice was actually her favorite part.  

FYI…I like my rice to still a bit of a bite to it, but if you like it softer than cook it a few more minutes.  Just make sure to add the lemon juice towards the end.

One pan and done

In less than 30 minutes and with only one pan you can have a delicious and pretty dinner on the table.  Does it get any better?  I love when a dish comes together super quick but it looks like it took hours and this dish is all that and even more.   The flavors really do make this dish something to remember.

Ingredients

3 large Boneless Skinless Chicken Breast, cut lengthwise
1/3 cup Parmesan Cheese, grated
2 tsp Salt
1 tsp Black Pepper
2 garlic cloves, grated
2 tsp all purpose seasoning
4 tablespoons butter, divided
1/2 cup Onion, chopped
2 Garlic cloves, minced
3 cups Cauliflower Rice (fresh or frozen)
2-3 tablespoons Chicken stock (or vegetable stock or water)
1 Lemon, zested & juiced
1/4 cup Parmesan Cheese, grated
Optional Toppings
Shaved Parmesan
Lemon zest
Chopped parsley

Directions

Pat chicken breast dry with paper towels
In a shallow plate combine parmesan cheese, salt , pepper, garlic cloves and all purpose seasoning
Press spilt chicken breasts into parmesan mixture and make sure each side is evenly coated
Continue for all chicken breasts
In a large skillet heat 2 tablespoons butter over medium high heat
Place chicken breasts, as many as will fit, into skillet and cook on each side for 3-4 minutes, or until cooked through and then remove to a platter, covering to keep warm
Repeat with remaining chicken until all is cooked
In the same skillet melt remaining butter
Add in onion and cook for 2-3 minutes or until it begins to soften
Stir in garlic and cauliflower rice and cook for another 4-5 minutes or until rice is cooked through but not super soft
Stir in chicken stock
Cook for another 3-4 minutes, or until all the liquid is cooked out
Stir in lemon juice, 1/2 of the zest & cheese
Cook for another couple minutes, stirring often
Place cooked chicken back into pan, sprinkle with remaining lemon zest, parsley & shaved parmesan (if using)
Serve & ENJOY
