It’s time for a FIESTA

I don’t know about y’all but I am ready for a little Fiesta.  This Fiesta Chicken is a party in your mouth!!

The good news about this meal is it seems quite indulgent but it really is quite healthy….now thats a win!

It’s just so pretty

I love it when food comes out looking pretty, I really do think it makes it taste better.  Have you ever thought about it?  If something looks good…it just seems to taste good (unless it has bananas in it).  For this dish the pretty not only comes from the salsa on top but also the browned chicken…it really gets some great color on it as it bakes.

The salsa is just so pretty and it comes togethers so quick I use it on almost anything.  I have made this salsa for parties to serve with chips, served it with enchilada soup or over salmon.  I make it year round.

It is quick & easy

Some chicken dishes require time to marinade…not this one.  The flavors get baked right into the chicken.  The honey, soy sauce, garlic, lime juice…etc all come together to make a delicious sauce for the chicken to cook in.  It is a little sweet and a little tangy with a perfect hint of sour making it a perfect bite each and every time.

Even better it only needs about 20 minutes total in the oven.  I normally use boneless, skinless breasts but you could use thighs if you wanted, just adjust cooking time as needed.

Fiesta Chicken

A fun, light and super flavorful chicken that is a perfect summer dinner...and don't worry it is on the table in less than a hour (more like 45 minutes at most)

Ingredients

Chicken
4-4 oz boneless, skinless chicken breasts
2 teaspoons course all purpose seasoning
3 garlic cloves, minced
1-2 tablespoons honey
1 tablespoon soy sauce
1 teaspoon rice wine vinegar (or apple cider vinegar)
1-2 tablespoons lime juice
1 teaspoon chili powder
1 teaspoon salt
Grilled Corn Salsa
4 ears of corn
Olive oil Spray
1 tablespoon chili powder
1 teaspoon salt
1 small purple onion, chopped fine
2 garlic cloves, minced
12-16 cherry tomatoes, sliced in half
1/4-1/2 cup fresh chopped cilantro
2-3 limes, juiced
2 small avocados, diced

Directions

Preheat oven to 400
Spray a casserole dish with nonstick spray
Season chicken with all purpose seasoning on both sides and place into prepared pan
In a small bowl whisk together garlic, honey, soy sauce, vinegar, lime juice, chili powder and salt
Pour over chicken and toss to coat
Cover pan with foil and place into oven
Bake for 15 minutes and then remove foil to let chicken brown on top
Remove after 20 minutes and check that chicken is done, continue cooking if needed
>>> While chicken is cooking prepare Grilled Corn Salsa <<<
Preheat grill, or grill pan, to medium high heat
Rub oil with olive oil
Sprinkle chili powder and salt over chicken
Grill corn for 2-3 minutes per side, or until corn begins to char
Remove corn from grill and cut kernals off the cob
Toss corn with chopped onion, tomatoes, cilantro & lime juice
Just before serving toss in chopped avocado
Top chicken with corn salsa and serve

Notes

You can prepare the corn salsa ahead of time and store in the refrigerator until ready to serve...just make sure and toss in the avocados just before you serve

Change it up a bit

If you don’t feel like grilling the corn, just used can.  If cherry tomatoes not in your fridge use a big one or replace with asparagus or green beans.  Want to add more kick throw in some cayenne pepper or extra chili powder to the chicken and the salsa.

Not feeling chicken?  You can use this same cooking method with salmon, tilapia or pork chops.  The possibilities are endless.
