Instant Pot Whole Chicken

Are you a fan of the rotisserie chickens from the grocery store?  I am.  I usually get one or two a week and use them in everything from chicken salad to enchiladas to a wrap.  As much as I love buying them at the store I love this Instant Pot Chicken even more. I can use whatever seasoning I want, even the salt free Traders Joe’s seasoning.  Trust me it is AMAZING!

Options…. Options… and more Options

The beauty of making your own whole chicken, instead of depending on the grocery store, you can create your own flavor.  Recently my dad spent sometime in the hospital and it was determined that he needs to be on a very LOW sodium diet.  Well as a food blogger I decided to take the challenge and run with it.  I wanted to create amazing food without salt that my dad would love.

I started researching the best seasoning blends out there that are salt free. After talking to my bff and reading some reviews online I went straight to Trader Joes and picked up their 21 seasoning salute blend.  It is so good!  I used it on this chicken and it was amazing with the lemon, and I promise we didn’t even miss the salt.

You could use any of your favorite seasoning blends or keep it super simple.   One of favorite blends is just salt, pepper and garlic powder.

No thawing needed….

The beauty of this Instant Pot dinner is the fact that I cooked the chicken straight out of the freezer. No thawing needed.  Yes you read that right, frozen chicken straight into the Instant Pot.  Even better you can have a fully cooked chicken in less time than it would take to thaw it out.

Now I call that a perfect dinner for a busy night.

Instant Pot Whole Chicken

An easy way to cook a whole chicken without having to take the time to thaw it out. Even better the chicken is cooked in under 90 minutes.

4-5 pound Frozen Whole Chicken (or a thawed one)
1-2 tablespoons extra virgin olive oil
3 tablespoons all purpose seasoning blend
1 cup chicken stock
1 lemon juiced


Rinse frozen chicken under cold water and pat dry
Rub olive oil over entire chicken
Sprinkle with seasoning mix on all sides, set aside
Pour in chicken stock and lemon juice with the lemon halves
Place trivet into Instant Pot
Place chicken onto trivet with breast side up
Cook on High for 60 minutes, letting it naturally release for 10 minutes
Quick release and then check with thermometer in the breast making sure it is atlas 165 degrees before removing chicken
Once cooked remove from Instant Pot and place onto a sheet pan
Place under broiler for 5 minutes to let skin crisp up and brown
Serve & ENJOY


If using a fresh chicken cook for 30 minutes and then check temp
