a new pesto love
Are you a pesto fan? I am for sure…I love pesto anyway, anyhow. Especially when it is changed up a bit. Arugula for the change-up I am a big fan of basil. I love using it in my red sauce for pasta or for a simple bruschetta, but for pesto I prefer arugula. It adds a bit of peppery bite to the pesto without it being overpowering. I also love the color. It is not too dark, and not too light…it is the perfect green. Now I know this is not the traditional option, but then again when do I keep things traditional? And if you want to be traditional…

a classic recipe…updated a bit
I love making classic dishes that bring me back to my childhood. A favorite soup (like this one), cake (such as this sheet cake) or casserole (like this chicken and rice) but give it a bit of an update…you know add a little sparkle to it. I am not going to lie, sometimes they work and sometimes they do not work at all. This time around I have to say to was a HUGE success, and this is now my go to recipe for this old school favorite. To start with…it is all made in one pan Growning up I remember my mom using several pans to make most…

Refrigerator Bran Muffins
Ok so I have an obsession I need to let everybody know about. I am obsessed with these Refrigerator Bran Muffins!! I mean OBSESSED!! Just let it chill One of the best parts about this recipe is the fact that once you make it and then let it chill in the refrigerator for up to 6 weeks. The recipe makes a lot of batter. I mean a TON of batter meaning you can have warm muffins anytime you want. And I do mean ANYTIME. I have been known to make a few of them at 9:00 at night, just because I want one…remember I told you I am OBSESSED. Little or…

a little caper to make dinner something special
I am a BIG, BIG fan of capers. There is just something so wonderful about these salty, briny little balls of goodness. I use them in my chicken salad (check back soon for that recipe), I use them in place of olives in A LOT of recipes and I use them in dips and spread for appetizers. As good as those all are my favorite way to use a caper is in a picatta. Just like this one! Salmon Piccata (in no time) Ok, Ok I know what some of you might be thinking…Picatta sounds kinda fancy, but trust me it really isn’t, it just looks fancy. In…

ch…cha…charro at home
Are you a refried bean or charro bean person? Me, I am a charro bean person. I just love the hint of heat in each bite…and now I can make them at home! It all starts with bacon Yep…you read that right. These Charro Beans start with bacon. You can use your favorite bacon but I highly recommend either bacon ends or thick cut bacon. These beans are going to be cooking for a while and the chunks of bacon will cook down better and in the end add in some great flavor. I mean just look at that big hunk of bacon in the middle of the beans…

Spring Brussels Sprouts everyone will LOVE
I can’t believe Easter has already come and gone and that we are more than half way through April. That means warmer temps, longer days & humidity in my part of the world. It also means it is time to celebrate all spring flavors and one of my favorite is lemon. & Some Brussels Sprouts Too Not only do I love lemons in the Spring but I really love them with Brussels Sprouts….especially these roasted ones with a little parmesan cheese. The char from the outside skins on the sprouts really pairs well with the brightness and tang from the lemon juice and zest. I also think it is really…

Avocado Cream Tilapia (KETO Friendly)
The weather is warming up, the days are getting longer and school is winding down…that means Spring is here! With Spring comes lighter dinners, citrus kissed almost everything and beautiful colors everywhere, even on your dinner plates. Light but so full of flavor In my family Spring means seafood and lots of it. One of our favorites is tilapia. Each filet is frozen individually making it so easy to fix just what you need and it cooks so quick making it perfect for quick dinners. One of my tricks is to season the heck out of it but with just a few spices…salt, pepper, garlic powder and a little chili powder. Just…

Simple Perfection for dinner
Sometimes the best dinner is all about something super simple, but super delicious. This chicken may seem a little simple, but just wait until you try it…it is so, so good! Simple and SO GOOD! In my world simple starts with just a few ingredients and as few steps as possible to make it amazing. And for this chicken it is all about the seasoning combo. When it comes to seasoning combos I sometimes like to use a very fine blend, but sometimes I like a more course blend. I find that a course blend can really amp up the flavor without adding a ton of work….and that is a…

meatballs are on the menu…
Are you fan of meatballs? I AM, but just recently started making my own. Never needed to… I am a huge fan of meatballs and I became a fan of meatballs because my MeeMaw (look how cute she is) would make them. She would always have some in her deep freeze. She would whip them out for a quick pasta dinner or for her meatballs and gravy. In college I attempted one time to make meatballs, but they were nothing like my MeeMaw’s, and I never made them again until now. The rolling begins… When I decided it was time to attempt meatballs once again I went searching for my MeeMaw’s recipe. After…

Chicken Spaghetti…from scratch!!
Chicken spaghetti has been a favorite of mine for many, many years. Ever since one of my oldest friends, Bonnie, made it for me. Back then we used canned everything (including canned chicken) and processed anything we could find, and it was SOOOOO good. Remaking a favorite As much as I love this classic I decided Iw anted to remake it…all from scratch. OK I know from scratch can sound kinda scary but don’t worry this from scratch recipe is super easy. To add in a ton of flavor and a little color I start with red, orange or yellow bell peppers. Most of the time I will use 1…
