Simple Perfection for dinner

Sometimes the best dinner is all about something super simple, but super delicious.  This chicken may seem a little simple, but just wait until you try it…it is so, so good!

Simple and SO GOOD!

In my world simple starts with just a few ingredients and as few steps as possible to make it amazing.  And for this chicken it is all about the seasoning combo.

When it comes to seasoning combos I sometimes like to use a very fine blend, but sometimes I like a more course blend.  I find that a course blend can really amp up the flavor without adding a ton of work….and that is a win win.

For this chicken I went with a course steak seasoning.  I love the combo of black pepper, salt and garlic.  If you wanted you could use your favorite poultry seasoning.  Either way just make sure you season generously giving the chicken a nice crust as it cooks.

It is just roasted chicken

Yes, it is just roasted chicken.  Yes, it may seem like nothing too special, but trust me it can be.

I don’t know about your family but in mine it is easy to get into a routine of eating the same things over and over again.  You always have it on hand, it is easy to whip up and everyone likes it…trust me I get it.  I really do, so when we had all the burgers and steak we could I decided to throw in some chicken breasts to the mix.

PS…The crust that was formed as it cooked make each bite something to savor…and I promise each bite was better than the last.

Simple Roasted Chicken

A simple roasted chicken that is perfect for for dinner this week, or meal prep for the whole week. I love to keep some on hand for a quick meal option.

Ingredients

1 1/2 pound boneless & skinless chicken breast (4 breasts, 6 oz each)
2 tablespoons course steak seasoning (or poultry seasoning)
1 tablespoon dried onion flakes
2 teaspoons dried parsley flakes

Directions

Preheat oven to 425
Line a rimmed baking sheet with parchment paper or foil, set aside
In a small bowl combine steak seasoning, onion flakes and parsley
Rub spice mixture onto the chicken breasts on each side, pressing it into the chicken to make it stick
Place chicken onto prepared pan
Place into oven and roast for 20-25 minutes, or until chicken juices run clear
Remove and serve, or let cool and then store covered in the refrigerator

So many options

For this dinner I made some quick cheesy potatoes and my favorite brussel sprouts.

You could also use it to top your favorite salad or for a chicken salad.  The possibilities are really endless.
