I need this Chocolate Pie…NOW

choc pie whipI think I could eat pie everyday, given the opportunity.  I love a good creamy filling topped with more yumminess all wrapped in a flaky crust.  Doesn’t it just sound so good?  Well, if you love pie too you have to try this Chocolate Cream Pie…it is a must make for sure!!

Chocolate, please…

My favorite pie of all time is definitely a chocolate cream pie.  I just love the deep dark chocolate filling paired with a fully whipped cream topping, making each bite  OH SO GOOD!

choc pieFor this pie I used bittersweet chocolate.  The sis-in-law and I prefer a dark more bitter taste. If you wanted a lighter chocolate you could use semi sweet or milk chocolate.  I also added in some espresso powder to help intensify the chocolate but it is totally optional.

Espresso powder you ask? I use it in all my chocolate desserts as I feel it just adds a little something special.  Don’t worry though it won’t taste like a mocha.

The Crust…

Ok, now there are a few options for the crust.  I made my Easy Homemade Pie Crust, but you could use a store bought pie shell or even a graham cracker crust…ooohhhh a graham cracker crust would be so, so good.

Whatever you decide to use just make sure the crust is cooled before you add in the filling.

Fluffy is oh so good….

Are you a whipped cream or meringue fan?  I am a HUGE fan of both, but for this pie I went with whipped cream.  My mom is not a meringue fan AT ALL, and she loves chocolate pie so in honor of Honey it was all about the whipped cream.

You can do a basic meringue if you want…just make sure to wait and do the topping closer to when you are going to serve it.

Ingredients

1 1/2 cups sugar
1/4 cup cornstarch
1 teaspoon salt
2 teaspoons espresso powder (optional)
3 cups whole milk
4 large egg yolks
8 oz bittersweet chocolate, chopped into chunks
2 teaspoons vanilla extract
1 tablespoon butter
1 pie crust, baked
1 cup, fluid heavy cream
2 teaspoons sugar

Directions

In a heavy bottom saucepan whisk together sugar, cornstarch, salt & espresso powder (if using)
In bowl whisk together milk & eggs until well combined
Pour milk mixture into sugar mixture and heat over medium heat
Bring mixture to a low boil, whisking very often, until it is thick like pudding
Once it is thick remove from heat
Stir in chocolate, vanilla and butter until chocolate is melted and everything is incorporated well
Pour into baked pie shell
Place into refrigerator and chill for at least 4 hours
--When ready to serve--
In the bowl of a stand mixer, or a large bowl, whip cream and sugar until soft peaks have formed
Spoon onto chilled pie
Top with grated chocolate if desired
Cut & Serve
