Oatmeal Cranberry Bran Muffins
Oatmeal Cranberry Bran Muffins are my answer to my mom’s bran muffins. Growing up mom always had these Bran Muffins in the refrigerator ready to bake, well I have updated them just a bit. Cranberry + Oatmeal + Bran = Yes! I love a good muffin for breakfast, or a snack, but I especially love them when there are cranberries, oatmeal and the sweetness of my bran muffins. The cranberries and oats really help cut the sweetness of the muffins while adding in great texture and a bit if tartness. If cranberries are not your thing you can use dried cherries, or another dried berry if wanted, or leave out…

Cinnamon Roll Bites – Your New Go-To Breakfast
Cinnamon Roll Bites are the perfect Christmas morning breakfast. They are quick, easy and bring the wonderful aroma of homemade cinnamon rolls (like these) without all the work. It all starts with Biscuits… These delicious cinnamon roll bites start with canned biscuits. Yep, you read that right… canned biscuits. That is what makes this recipe so easy, you cut up canned biscuits. I used the grands buttermilk biscuits, but you could use whatever you have on hand. PS…Flaky biscuits would be pretty good I bet. Let’s talk Cinnamon & Sugar (& few little something extras) Growing up I ate A LOT of cinnamon toast and these Cinnamon Roll Bites…

Pumpkin Cranberry Pistachios Bread
I am a BIG fan of pumpkin (as I am sure you know), pistachios and cranberries… but I am an even bigger fan of pumpkin bread and this pumpkin bread is AMAZING!! It is loaded with tons of yum and each bite is like a party in your mouth. PISTACHIOS & CRANBERRIES GALORE! I am all about a traditional pumpkin bread but this loaded pumpkin bread is just so, so good. I have always loved cranberries with pumpkin but for some extra fun I wanted to add in some pistachios. Pistachios are a favorite for me with cranberries, as in these cookies. The cookies are SO GOOD I knew…

Pumpkin Butter
OK… I have a sad story about pumpkin butter. As I am sure you know by now I am a BIG, BIG pumpkin fan. One of my most favorite pumpkin treats is pumpkin butter, but when I went to buy some the other day at Trader Joes they were out! There was none to be found… NONE!! MY Pumpkin Butter Obsession So it all started back 10+ years a go when I was aimlessly wondering through Williams Sonoma one October day. This very sweet lady came up to me and asked if I would like to try some pumpkin butter. I mean she had me at the word pumpkin but…

Sweet & Spicy Bacon
Bacon is always a good thing in my world… but this bacon is AMAZING!!! Bake it Baby! The trick to this bacon is baking it…do you normally bake it? I started baking mine a while ago…not only does it make perfectly crisp, but still tender & it is so much LESS messy. There is no grease spattering up to burn you and you can let it bake while you work on something else such as eggs or gravy, making breakfast a breeze and so YUMMY! Spice it up! For this recipe I sprinkled it with a spice combo that is a little sweet with a little heat making for a perfect piece…

A Christmas Tradition
Christmas is just around the corner and I think I am going to have to make these again. Don’t be scared…you can do this. It is all about Christmas patience Homemade cinnamon rolls are 1000% better than the canned version, but beware you have to plan ahead. You need several hours (I started the process the night before) to let the dough proof and get ready to roll up into rolls. SO what is proofing you ask? Proofing is when you let the dough rise. For this dough we are wanting it to rise, or proof, quite a bit. The goal is at least double from its original size.…

Pumpkin Crumb Muffin
It’s Pumpkin Crumb Muffin Time, Y’all! I know it is still August, but y’all I am all about pumpkin spice everything…and these muffins are the perfect kick-off to my pumpkin obsession! Just enough spice… The thing I love most about pumpkin spice is the combo of the spices. There is a little cinnamon, some clove, some ginger, not too much of any one spice and not too little…it really is the perfect combo. Pumpkin spice makes me feel all warm and cozy inside, just soooo happy. These muffins have pumpkin not only int he batter but also in the topping but don’t worry it is not over powering…it is just…

KETO Quiche
Since I started on my KETO journey I have been seeing egg “muffins” all over Pinterest. I have been wanting to make them for a long time and today was the day. Now I am kicking myself for not making them before now. Options…Options and more Options In my book options are always a good thing. I wanted to have something that everyone would like so I went with a bacon option, a sausage option and an all veggie option with bell peppers. In each option I added in chopped spinach and chopped onion. Personally all were SO GOOD, but the bacon was my favorite… everything is better with…
