dreams are made of this new pumpkin love…

pumpkin layer-hObviously pumpkin is on everyone’s brain this week…and my brain is defiantly no exception.  Really to be honest pumpkin is all I can think about…I just love pumpkin everything. 

Now the traditional pumpkin desserts are perfect for your Thanksgiving table but this year I wanted to change things up a bit and create a lighter dessert but with all the best it had to offer.  The first layer is a delicious graham cracker crust, it is buttery and a little crunchy.  Next there is a cheesecake layer that is light with the added whipped cream but still very rich.  Next comes the pumpkin layer that is a wonderful pudding like layer loaded with tons of  flavor.  Then top it all off with more whipped cream and a few chopped pecans and you have a delicious light dessert that is still full of everything you love about fall.

We had a little family dinner this past weekend and I was supposed to bring dessert so I whipped this up and everyone LOVED it!    They couldn’t believe how light it was while still being rich.

Pumpkin Layer Dream

A light pumpkin cheesecake dessert that is a perfect addition to your more traditional Holiday desserts

Ingredients

3 cups graham cracker crumbs
1 cup butter, melted
8 oz cream cheese, room temperature
1/4 cup sugar
1/4 cup half & half
1 tsp vanilla
1 cup whipped cream
1 large package instant vanilla pudding mix
3 cups whole milk
1 cup pumpkin puree
2 tsp pumpkin pie spice
1 cup whipped cream
2 cups whipped cream

Directions

Preheat oven to 350
Spray a 9x13 glass baking dish with nonstick spray, set aside
In a small bowl stir together graham cracker crumbs and melted butter until well combined
Press graham cracker mixture into prepared pan, pressing it down as needed to create a smooth layer
Place into oven & bake for 20 minutes, or until browned and set
Remove and let cool
In the bowl of a stand mixer (or a large bowl) whip cream cheese & sugar until smooth
Add in half & half and vanilla until well combined
Fold in whipped cream until well combined
Spoon on top of graham cracker crust and gently spread into an even layer
In a large bowl whisk together pudding mix and milk until it thickens
Stir in pumpkin puree & pumpkin pie spice until well combined
Fold in 1 cup whipped cream until well incorporated
Spoon over cream cheese mixture and gently spread into an even layer
Spread remaining whipped cream over pumpkin layer and sprinkle with chopped pecans (if using)
Place into refrigerator to chill for at least 2 hours before serving

For this recipe I used my all day whipped cream which really added in a lightness that didn’t deflate…it was so good!
