• Pumpkin Crumb Muffin

It’s Pumpkin Crumb Muffin Time, Y’all!  I know it is still August, but y’all I am all about pumpkin spice everything…and these muffins are the perfect kick-off to my pumpkin obsession! Just enough spice… The thing I love most about pumpkin spice is the combo of the spices.  There is a little cinnamon, some clove, some ginger, not too much of any one spice and not too little…it really is the perfect combo.  Pumpkin spice makes me feel all warm and cozy inside, just soooo happy. These muffins have pumpkin not only int he batter but also in the topping but don’t worry it is not over powering…it is just…

  • KETO Pumpkin Muffins

Muffins are my weakness…especially pumpkin muffins.  One of my biggest fears when I went on KETO was I would have to give up my muffins, I mean they are normally not low carb.  Thankfully that fear was put to rest with these AMAZING KETO Pumpkin Muffins. The Swirl is EVERYTHING It is no secret that I am all about anything and everything pumpkin spice.  As much as I love a good plain pumpkin muffin to make these a little extra special I added a cream cheese swirl to the top.  Isn’t just about anything better with a little cream cheese swirl? I kept it super simple with just cream cheese,…

  • Spiced Molasses Sandwich Cookies

I have a new favorite cookie… Spiced Molasses Sandwich Cookies!  Trust me… you will LOVE them! The perfect blend The cookie itself is quite sweet, especially with the course sugar, but the pumpkin-butter buttercream is the perfect balance.  It is just a little sweet with a good bit of spice making each bite the perfect balance.   If you are planning on just eating the cookies and not making them into sandwich cookies you could leave off the sugar until right when you bring them out of the oven.  That way the sugar is just on the top and not on all sides. Sugar options When I roll cookies in…

  • Pumpkin-Butter Buttercream

The Holidays call for 2 things in my book… pumpkin and buttercream. One of my favorite pumpkin treats is Trader Joes Pumpkin Butter.  It is a little sweet with a little spice making it AMAZING!   When you add it to this buttercream recipe it is AMAZING! Not your normal filling I love a good sandwich cookie with a  good filling.   I love the richness and creaminess it brings to anything and everything you add it to.  Most of the time buttercream is used on cakes and cupcakes, but this time I used it as the filling for my new favorite cookie.  Yes cookie my Spiced Molasses Sandwich Cookies. • Keto Pumpkin Bread

Pumpkin anything is my downfall, but a really great pumpkin bread is my MOST FAVORITE fall treat.   Time for Pumpkin, people I love to use pumpkin in baking.  It adds so much moisture to cakes and breads without a lot of extra fats, carbs or calories.  I even add it to my coffee sometimes for a little extra creaminess and something special….my own homemade PSL. For this recipe pumpkin is the star and it helps to create one of the best pumpkin breads I have EVER had. A little extra crunch To add a little something extra to this amazing pumpkin bread I topped it with spiced walnuts.  Yes,…

  • Pumpkin Butter Cookies (KETO/Low Carb Friendly)

Happy Fall!!  I cannot believe it is almost October!  To celebrate I made KETO friendly Pumpkin Butter Cookies and they are AMAZING! The perfect Fall cookie One of my biggest fears going on KETO was missing out on the sweets.  To be honest I do not have a big sweet tooth but I do like a little something sweet here and there.  A couple of friends suggested I make “fat bombs” immediately and I did and I love them (I will post a recipe for those soon) but the last few days I have been craving a cookie or cake…specifically pumpkin cookies or cake.  Thankfully I adjusted a favorite recipe…

  • Pumpkin Sugar Cookies

September is in full swing and that means it is Pumpkin Spice Season…right?  To celebrate everything pumpkin, I had to make these Pumpkin Sugar Cookies.  They are my new favorite sugar cookie!! Not too much Pumpkin Ok I know that sometimes pumpkin spice can over power everything and become too much, but not in these cookies.  There is just enough hint of spice, without being in your face pumpkin pie spice.   If you wanted more spice you could add in an additional 1/2 teaspoon of cinnamon to make them more like a pumpkin snickerdoodle. Grab a glass This cookie batter does not spread so it is important to press…

Pumpkin, please I love pumpkin anything and everything, and I can eat pumpkin anytime, especially this bundt cake.  The pumpkin makes the bundt cake super moist without making it heavy and then with the addition of the pumpkin pie spice gives it just the right amount of warmth in each bite.
