St. Patrick’s Day issue soon!  I cannot believe we are already into March.  This year is flying by.  St. Patty’s Day is a day to celebrate in my house, it is was of my dad’s favorite days so we always try to do something fun.  

Not only will have Instant Pot Corned Beef but we will also have these AMAZING Guinness Brownies!!

Yes, Guinness Brownies

I am a big fan of dark, heavy beer and especially Guinness.  Each year on St. Patrick’s Day I would have one with my dad, so a few years ago I decided to to bring the beer to dessert as well…in brownies.  I am so glad I did, and so was my dad.

The brownies are very dense, fudgy and full of CHOCOLATE!  The hint of Guinness only intensifies the chocolatey goodness.  Trust me Guinness in brownies is a really GOOD idea!!

OH so Fudgy

It is no secret that I love a good brownie.  Like these Salted Caramel Brownies or these Oreo Brownies.  I have to tell you though these Guinness Brownies might just be my new favorite.  Not only are they loaded with chocolatey  goodness they are super fudgy… like SUPER fudgy.

If you like a more cake style brownie these may not be the brownie for you, but if you like a rich, fudgy brownie then you need to make these NOW!  RIGHT NOW!

Guiness Brownies

Rich, fudgy brownies with a little surprise, Guinness. These are some of the best brownies I have ever had.

Ingredients

2 bottles Guinness Beer (I used extra stout)
6 tablespoons butter
4 ounces dark chocolate
4 ounces semi sweet chocolate
4 ounces white chocolate
4 eggs, room temperature
1 cup sugar
1 cup flour
3/4 cup unsweetened cocoa powder
1/2 teaspoon salt
1 teaspoon vanilla bean paste (or vanilla extract)
1 1/2 cups dark chocolate chunks (or chocolate chips of your choice)

Directions

Preheat oven to 350
Line a 9x13 pan with parchment paper, set aside
In a medium saucepan heat Guinness over medium high heat, bringing it to a simmer
Let simmer until reduced to about 1 1/2 cups, making sure to not let it bubble over
Remove from heat and let cool once reduced
In a small saucepan melt butter, dark chocolate, semi sweet and white chocolate until smooth, stirring often to keep from burning - you can melt in the microwave if you prefer
Remove from heat once melted and smooth
In the bowl of a stand mixer, or large bowl, mix together eggs and sugar until light, about 3 minutes
Add in chocolate mixture and vanilla, mixing until well combined, scraping down the sides as needed
Add in flour, cocoa powder and salt, mixing until just combined
Add in Guinness and mix until just combined, batter will be fine
Pour into prepared pan
Sprinkle chocolate chunks over the top
Bake for 20-24 minutes, or until middle is set and toothpick comes out almost clean
Let cool in pan for 10 minutes before removing from pan
Let cool completely before cutting
ENJOY!

Notes

You can replace the dark chocolate with semi sweet or milk chocolate if you prefer.

These are perfect for St. Patty’s Day being they have Guinness in them, but trust me these are not just for St. Patty’s Day.  These will be one of my go to brownie recipes for sure!!  They are just SO GOOD!
