Cookies & Cream Blondies

I am a BIG Blondie fan.  I just love how the brown sugar caramelizes to make each bite better than the last.  To make these blondies extra special I added in a few favorites, Oreos and Sprinkles!

A little extra

Blondies are definately good on their own but when you add in a little something extra they become AMAZING.  The add-in options are truly endless.  You could add in candy such as snickers or peanut butter cups.  You could add in nuts or pretzels.  You could mix in additional chocolate chips such as semi-sweet, butterscotch or dark chocolate.  

For these blondies I decided to go with oreo cookies, sprinkles and white chocolate chips for my add-in’s.  Easter is just a few days away so I went with Easter sprinkles, they look like little bunnies, but any sprinkles you have on hand would work.  If you do not have any don’t worry they are amazing without sprinkles, I just think they are SOOOOO CUTE!

Quick and Easy

Not only are these blondies DELICIOUS but they are also SUPER EASY.  You only need one bowl and one pan and you’re done.  In under a hour… seriously in like 45 minutes … you can have delicious blondies just waiting to be devoured!!

Even better there are so many options you probably don’t even need to go to the store!!

PS… they are just so cute!

Whether you are making these for Easter, or Christmas or just because the little bit of sprinkles really just makes these blondies something to remember.  I mean who doesn’t love a little sprinkle in their life, especially their sweet treat?  

For 4th  of July and Memorial Day I have red, white and blue sprinkles.  For summer I have neon sprinkles and then for Fall I have orange and brown.  Christmas has a ton of options but some of my favorites are snowflakes and grinch green and red.  Seriously the options are ENDLESS!

Cookies & Cream Blondies

Cookies & Cream Blondies are the perfect quick fix treat. They are loaded with tons of yummy and come together in no time.

Ingredients

1 cup butter, melted
1 1/2 cups brown sugar
2 eggs
2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
12 Oreo cookies, crumbled, divided
1 cup white chocolate chips (or semi sweet, butterscotch or peanut butter chips)
1/4 cup sprinkles, divided (optional)

Directions

Preheat oven to 350
Line a 9x13 baking dish with parchment paper, set aside
In the bowl of a stand mixer, or large bowl, mix together melted butter and brown sugar
Add in one egg at a time, mixing until just incorporated
Add in flour, salt and baking soda mixing until just combined, scraping down the sides as needed
Stir in oreo cookies, white chocolate chips and sprinkles, reserving a few oreos and sprinkles for the top
Pour into prepared pan and top with remaining oreos and sprinkles
Bake for 22-24 minutes or until center is just set
Remove and let cool in pan for 10 minutes and then move to cooling to cool completely before slicing

Notes

Use any combo of chocolate chips and sprinkles you prefer
