    I don’t know about y’all but I am ready for a little Fiesta.  This Fiesta Chicken is a party in your mouth!! The good news about this meal is it seems quite indulgent but it really is quite healthy….now thats a win!     let’s talk TURKEY When we first started talking about this Early Thanksgiving Dinner my brother said he wanted to smoke the turkey.  I was thrilled…I couldn’t wait.  He had smoked one last year for our family Thanksgiving and it was good, but he said he wanted to make it even better, and that he did.     Happy Monday (almost Tuesday)!!  How was your weekend?  Was it packed full of fun, or relaxing?  Well I had nothing short of a crazy busy & super fun one with my niece and nephew.   It started with a soccer game and ended with several dance parties and  cookies, with a ton of fun in the middle.
