Red Velvet for some Valentine’s Day Love!

Valentines Day is just around the corner and that means it is time to break out all the red velvet recipes and celebrate with the one you love.    These whoopie pies will be a favorite Valentines Day treat for sure!!

It’s time for a little whoopie…whoopie pie that is

I’m sorry I just can’t resist.  It is just too easy.  Ok…I know enough, lets move on.

I love red velvet anything.  Red Velvet cake, red velvet cupcakes and especially red velvet whoopie pies.  Whoopie pies are just about the best invention ever.  They are a perfect cross between a cupcake & a cake that can all be held in your hand.  No fork needed and you get a little cake and a little icing in each bite.  It doesn’t get much better (at least in my opinion).

Who knew how easy they are…

Are you a fan of whoopie pies?  I ams BIG  fan but I had never made them.  These are fun not only for kids, but also for adults, and they are super easy!!

You mix together some pretty basic ingredients to make a super moist and delicious thick cake batter and then a fluffy frosting and voila you are done.  Trust now that I know how easy they are I will making all sorts of whoopie pies.

Red Velvet Whoopie Pies that are light but still rich and filled with a delicious cream cheese filling that makes these whoopie pies something to remember!!

Ingredients

2 cups all-purpose flour
1/4 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter, room temperature
1 cup, packed brown sugar
1 large egg
2/3 cup buttermilk
2 teaspoons vanilla bean extract (or vanilla extract)
1 teaspoon Red Food Coloring (may need more) - I use gel food coloring
Cream Cheese Filling
8 ounces cream cheese, room temperature
1/4 cup butter, room temperature
1 teaspoon vanilla bean extract (or vanilla extract)
1 cup confectioner's sugar
Seasonal sprinkles for decorating, if desired

Directions

Preheat oven to 350
Line baking sheets with parchment paper, set aside
In a medium bowl whisk together flour, cocoa powder, baking soda & salt, set aside
In the bowl of a stand mixer cream together butter and brown sugar until light and fluffy, about 4-5 minutes
Add in egg, mixing until just combined, scraping down the sides as needed
Add in buttermilk and vanilla bean extract until just combined
Slowly add in flour mixture, scraping down the sides until just combined and no flour streaks remain
Drop in food color and mix until mixture is a deep rd (or the color you desire)
Using a cookie scoop place mounds of dough onto prepared baking sheets
Bake for 9-11 minutes, or until cookies are just set in the center
Let cool on baking sheet for 2-3 minutes and then remove to a cooling rack to cool completely
--For the Filling--
In the bowl of s stand mixture cream together cream & butter until very smooth, scraping down the sides as needed
Add in vanilla bean extract and mix until combined
Add in confectioner sugar mixing until combined with mixer on low
After sugar is combined turn mixer onto high and beat for 4-5minutes until filling is light and fluffy
Once cookies are cooled completely place a good amount of filling onto 1 whoopie cake and then sandwich with another, repeating until all whoopee pies are made
Roll in seasonal sprinkles is you want
Serve and ENJOY!!
