• Mom Dibert’s Corn Casserole

The sis-in-Law’s mom, Cathleen is an amazing cook.  Everything I have had from her has been so, so good.   She is very well known for her pies, but she is also known for this corn casserole. Bring on the corn When Cathleen said she wanted to bring this casserole to our Early Thanksgiving Pot Luck Dinner I was so excited.  I personally LOVE corn casserole, and my brother had told me how good her was so I couldn’t wait to try it.   A few days before though she told me she wasn’t sure if she could make it as they were having new floors installed and she didn’t…

  • Bourbon + Bacon this Thanksgiving

Every Thanksgiving there is always a sweet potato casserole of some kind.  Last year I did a casserole that had a little something for everyone (recipe can be found here) but this year I wanted to take it to the next level. It all starts with Bacon In my family if you want to make everyone happy you can add bacon to it and everyone will LOVE it.  I was hoping this little trick would work for sweet potatoes as well.  You see there are a few people in my sweet family that are not sweet potato fans.  This is proof that not all people are perfect, just kidding (not…

  • It has a veggie in it, so it’s healthy… right?

The life of a food blogger is fun no doubt, but when it comes to the Holidays it can get a little hard to come up with new recipes each year.  So this year I decided to have a Friends and Family Early Thanksgiving Pot Luck Dinner and have everyone bring their favorite dish.  And this is just the beginning of the yummies that showed up that day.  Make sure and check back for all these other recipes that will be posted in the next few days. Coming Soon…. For The Hubby When you ask The Hubby what he wants on the Thanksgiving table his first response is broccoli and…

  • stack it up

It is Monday!!  Where did the weekend go?  Also, did you know that simmer is also over?  Yay…it is crazy school starts in 2 weeks. Monday needs easy…EVERYTHING When Monday rolls around I know I love it when I can feed my peeps something yummy and EASY…because lets be real who wants to slave away for hours in the kitchen on Monday. When I was growing up my mom loved making casseroles…and now I love them so much.  They are perfect for a family, as they can feed a lot.  They make great leftovers…meaning you can have meals for a couple of days (always a plus) and you can usually…

  • casserole = happy Cinco de Mayo

Cinco de Mayo is just around the corner and that means it is time to indulge a little in some delicious Mexican fare.  As I have mentioned many times before I LOVE Mexican food…and this casserole helped foster that love when I growing up. Honey (my mom) loved casseroles as they really are perfect for a busy family and we were definitely busy.  My brothers and I were involved in tons of activities which made family dinner hard but so important.  Some of our favorite casserole were chicken spaghetti, or this king ranch chicken casserole, but this cheesy mexican chicken casserole with nacho chips was one of my favorites for sure.   It…

  • a mac-n-cheese treat for all ages…

Comfort food is always a treat and when we were growing up mac-n-cheese & sausage was a a treat for sure.  Back then my dad was the master of mac-n-cheese.  He would make it on the stovetop with noodles, velveeta and cheese and we thought this was the best mac-n-cheese EVER.  We loved how creamy it was and how cheesy it was…even better my dad would grill up some link sausage and it was a perfect dinner.   As I have grown up my taste have changed some but mac-n-cheese is still a favorite for me…and when paired with sausage it is still a treat.  To make it a little more…

  • a skinny tetrazzini…but don’t tell anyone

Some of my most favorite dinners are those from my childhood and chicken tetrazzini is one for sure.  There is just something so good about pasta, chicken and a creamy sauce all cooked together in a casserole.  To be honest I am not sure if it was the actual dish or just the fact that I LOVED casseroles.   My love of casserole’s started at an early age, some of my first memories of family dinners included a casserole of some sort or another.  My mom would make everything from a mac-n-cheese hamburger casserole to this enchilada casserole and of course her classic chicken tetrazzini, but as I have grown up I realized…

  • chicken parm on the skinny

Eating healthy doesn’t have to mean only salads and steamed veggies….casseroles can be a part of the menu as well, and this chicken parm casserole is a skinny but delicious dinner that everyone is sure to love.   I have made several chicken parmesans over the years, it is The Hubby’s favorite but most have been loaded with tons of calories & fat making them not very figure friendly.  So as we continue this healthier lifestyle one of the first dishes I wanted to recreate was chicken parm, but in a new way that The Hubby would love but without the guilt. Casserole’s have always been a favorite for The Hubby…

  • oh so good…skinny chicken and rice

Even when I am trying to eat lighter and make better choices there is one thing that I must have…CHEESE.  Now I know this is not the best must have, I mean obviously must having veggies are a better option but as long as I can have some cheese every now and then I am a much happier “skinny” eater & this chicken and rice casserole makes me happy for sure. Casseroles are also a must have…they are so easy, and if done right it can be balanced and full of flavor without a ton of guilt with some veggies & protein thrown in for good measure.  Growing up my mom made…

  • a little something sweet for (almost) everyone

A sweet potato casserole is a MUST HAVE on all of our Holiday tables.  There is just something so wonderful about the rich, creamy and fluffy casserole that makes the Holiday’s something super special.   In the past most of our casseroles have just had a brown sugar crumb topping because some of my family likes marshmallows and some like pecans and some like both and even a few that don’t like any so it was just easier to keep it minimal…well this year I decided to try and make (almost) everyone happy.  I made a traditional sweet potato casserole loaded with brown sugar, butter, half & half and then topped with…
