Quick and easy lunch with some pesto love
Summer is in full swing and that means quick and easy lunches are a must. Something that is yummy, delicious and perfect for a quick bite in between swimming and a trip to the park…I love summer! Just a few ingredients Chicken salad is a favorite of mine. I love the traditional version with mayo, mustard and celery. I also love a fancier version with apple, cranberries and walnuts… but my favorite chicken salad is this Pesto Chicken Salad. It is light but still full of flavor. I use pulled rotisserie chicken. I love how easy it is but also the flavor. Even better at my local grocery store…

Spinach & Cheese Stuffed Chicken
Have you ever just stared into your freezer and wondered how in the world you are going to make something yummy for dinner with what you have? Well, that was me not too long ago and then it hit me…I am going to stuff some chicken. I mean who doesn’t love a little stuffed chicken every now and then? What to stuff it with… Now that I decided to stuff chicken breasts what was I going to stuff them with? Off to the fridge I went and discovered spinach, garlic (I always have minced garlic), cream cheese and goat cheese. I don’t know about you but that…

A poppy good time….
There is one dish my Mammaw would always make for us when we go visit her…Poppyseed Chicken Casserole and I LOVED it!! Now I get to make it for her (with a few changes here and there)! All from scratch So my Mammaw was a good cook but she tended to use a lot of canned stuffs to make her dinners….you know like canned cream of chicken and canned chicken. It was easy and quick, which she loved. For me though I prefer to make my recipes from scratch but don’t worry it is still easy…I promise. The base of this casserole traditionally is cream of chicken soup, it is what…

a classic recipe…updated a bit
I love making classic dishes that bring me back to my childhood. A favorite soup (like this one), cake (such as this sheet cake) or casserole (like this chicken and rice) but give it a bit of an update…you know add a little sparkle to it. I am not going to lie, sometimes they work and sometimes they do not work at all. This time around I have to say to was a HUGE success, and this is now my go to recipe for this old school favorite. To start with…it is all made in one pan Growning up I remember my mom using several pans to make most…

a little caper to make dinner something special
I am a BIG, BIG fan of capers. There is just something so wonderful about these salty, briny little balls of goodness. I use them in my chicken salad (check back soon for that recipe), I use them in place of olives in A LOT of recipes and I use them in dips and spread for appetizers. As good as those all are my favorite way to use a caper is in a picatta. Just like this one! Salmon Piccata (in no time) Ok, Ok I know what some of you might be thinking…Picatta sounds kinda fancy, but trust me it really isn’t, it just looks fancy. In…

Simple Perfection for dinner
Sometimes the best dinner is all about something super simple, but super delicious. This chicken may seem a little simple, but just wait until you try it…it is so, so good! Simple and SO GOOD! In my world simple starts with just a few ingredients and as few steps as possible to make it amazing. And for this chicken it is all about the seasoning combo. When it comes to seasoning combos I sometimes like to use a very fine blend, but sometimes I like a more course blend. I find that a course blend can really amp up the flavor without adding a ton of work….and that is a…

Chicken Spaghetti…from scratch!!
Chicken spaghetti has been a favorite of mine for many, many years. Ever since one of my oldest friends, Bonnie, made it for me. Back then we used canned everything (including canned chicken) and processed anything we could find, and it was SOOOOO good. Remaking a favorite As much as I love this classic I decided Iw anted to remake it…all from scratch. OK I know from scratch can sound kinda scary but don’t worry this from scratch recipe is super easy. To add in a ton of flavor and a little color I start with red, orange or yellow bell peppers. Most of the time I will use 1…

not your momma’s chicken soup
The high today in the Houston Area is 84. I cannot believe it as I sit here and write it, it is going to be in the mid 80’s in February. Gotta love Texas weather. Even though it is starting to warm up a little The Hubby and I are still is soup mode and this soup definately hits the spot. Not your mama’s chicken soup Don’t get me wrong I am all about my mama’s chicken soup. It is delicious, but sometimes I like to change it up a bit and this Chicken Fajita Soup is one of my favorites. This soup brings together all my favorites from traditional…

King Ranch Chicken…my way
Living in Texas I grew up eating a delicious layered casserole called King Ranch Chicken. It is a rich and very cheesy mexican inspired casserole that always was a huge hit with family, friends and any pot luck it was brought too. A throwback made my way… Since I was little my mom has been making this casserole. Sometimes she uses corn tortillas, sometimes flour. She has used grilled chicken, rotisserie chicken and even canned chicken. Every once in a while she throws in some veggies, but we try to discourage such healthy behavior. I mean this cheesy & creamy casserole does not need any veggies to make it more…

enchilada soup…redone
It is soup weather and I LOVE it. There is just something so comforting about eating a bowl of warm soup when it is chilly outside. A few favorite soups in our house is this Corn Chowder and Potato Soup, but this new enchilada soup is defiantly up there on the list. A new favorite I love rich and creamy soups. Growing up I would almost always choose potato soup or chicken noodle soup. Now that I am making my own soup, I always tend to lean towards creamy and very flavorful soups and this enchilada soup is all that and more. One of my favorite enchilada dishes are Green Chile White…
