Wesley’s Breakfast Casserole
I always love my time with my AMAZING Niece and Nephew and this weekend was one of the best. Not only did we get a lot of “chill time” but we played a ton of games, laughed until our bellies hurt and we also cooked… rather the kids cooked. First they made dinner (stay tuned) and then breakfast. My niece, Audra, made French Toast Casserole (recipe coming soon) and Wes made this delicious Breakfast Casserole. Start Your Day Off Right! They say breakfast is the most important meal of the day, and my nephew loves a good hearty breakfast… sometimes he even has two. So when we started talking about…

Winter Spiced Steel Cut Oats
I am ALL about oatmeal, especially steel cut oats. I literally can eat them morning, noon and night…and these Winter Spiced Oats are perfect for a chilly morning by the fire. all about the spices… I love all the warm spices… think chai tea spices. For this oatmeal I wanted it to be flavorful enough where I didn’t have to add in a lot of sugar to make it yummy. So the spice fun began. The spice blend I landed on (after several attempts) is cinnamon, cloves, ginger, nutmeg, cardamon. You could also use pumpkin pie spice with additional cloves and cinnamon if you wanted. You could also…

Pumpkin Maple Scone
You need a Pumpkin Maple Scone in your life right now! LIKE NOW! Scone Time! I am a scone girl for sure. I just love how they are the perfect cross between a biscuit, cookie and muffin all in one cut little triangle of yumminess. For me a good scone is not too sweet, not too dry and light, not too heavy. If you have had very many scones there is a chance you have come across a tough scone here and there, and for that I am so sorry. It can definately damper your opinion of these delicious little brunch treats, but I hope you will give them another…

Pumpkin Butter
OK… I have a sad story about pumpkin butter. As I am sure you know by now I am a BIG, BIG pumpkin fan. One of my most favorite pumpkin treats is pumpkin butter, but when I went to buy some the other day at Trader Joes they were out! There was none to be found… NONE!! MY Pumpkin Butter Obsession So it all started back 10+ years a go when I was aimlessly wondering through Williams Sonoma one October day. This very sweet lady came up to me and asked if I would like to try some pumpkin butter. I mean she had me at the word pumpkin but…

Sweet & Spicy Bacon
Bacon is always a good thing in my world… but this bacon is AMAZING!!! Bake it Baby! The trick to this bacon is baking it…do you normally bake it? I started baking mine a while ago…not only does it make perfectly crisp, but still tender & it is so much LESS messy. There is no grease spattering up to burn you and you can let it bake while you work on something else such as eggs or gravy, making breakfast a breeze and so YUMMY! Spice it up! For this recipe I sprinkled it with a spice combo that is a little sweet with a little heat making for a perfect piece…

Strawberries, blackberries and blueberries, lots of blueberries. Blueberry, Love I love blueberry anything and at anytime but I really love them for a snack. I always try to keep them on hand for a quick bite when the afternoon is just dragging on or for a late night snack. A few weeks ago I found them on sale and decided to testa few recipes to make the blueberry shine. After several tests on several recipes I…

start your day with a berry good treat
I love the idea of smoothies. They are loaded with good for your stuff, you can drink them, and they are quick to make which is perfect for those super busy mornings. There is just one problem I have with most smoothies…I HATE bananas! A smoothie without a banana can be hard to find Do you go to those smoothie places and get creative with your smoothies….well that has always been a challenge for me. Most of them have bananas in them, and I cannot eat banana any way, any how. So I know that sounds a little wacky, really who doesn’t like bananas…well that would be me. This is…

Gravy, please
When you ask The Hubby what he wants for breakfast his typical answer usually is biscuits and gravy. Now his new favorite biscuits are these butter biscuits and his favorite gravy is this sausage gravy…so I bring you The Hubby’s Dream Breakfast. Don’t be afraid of gravy (like I used to be)… So when I first started cooking there were 2 things that I just couldn’t get the hang of…gravy and crust. Now I know some of you are probably laughing and shaking your head and trust me I did as well. I would ask myself why I couldn’t get these simple recipes down each time I would try to…
