It’s still summer

OK…I know.  It is September, Starbucks has pumpkin spice latte’s coming out go their ears and halloween candy is popping up at your stores…but guys it is still officially summer!!  Fall is does not start for another 15 days and that means we have just enough time for one more summer dessert (that I personally make year round).

It’s all about the curd…

SO I am a HUGE fan of lemon curd and always have some in my refrigerator,  I use it for everything from breakfast to desserts.  For me this is a staple year round, it is just so, so good!

Now I know the idea of making curd can be rather intimidating but don’t worry this curd is not hard at all.

Now to make these bars super delicious you have to use fresh lemons, now I know it will take some work but you need to squeeze the lemons and zest them…you will be so glad you did.  If you look real close at the pic above you can see some lemon zest floating on the top…I tell you these are so good.

As the filling bakes it becomes like the consistency of the curd with a soft top layer making it a perfectly layered lemon bar.

The Crust…Oh The Crust!

Like any good lemon bar the crust on these bars is AMAZING.  I honestly think I could just eat the crust like a cookie…it really is just that good.

A lot of other bars have more powder sugar in their crust but I prefer a little less making for a not so sweet crust, but super buttery, which lets be real can it get better?  Even better when you pair it with the luscious lemon curd filling it becomes a perfect bar!!

Lemon Curd Bars

Perfect lemon bars that are made from scratch, but don't worry they are SOOOOO easy!! These are a must make this summer!!

Ingredients

Crust!
3 cups all-purpose flour
1 1/2 cups powder sugar
1 1/2 cup butter, melted
Lemon Curd!
6 large eggs
3 cups sugar
2 teaspoons vanilla extract
1 1/2 teaspoon baking powder
1/2 cup all-purpose flour
1/3 cup FRESH lemon juice - do not use the squeeze kind
3-4 lemons, zested

Directions

Preheat oven to 350
Line a 9x13 pan with parchment paper, or spray with nonstick spray
In a large blow whisk together flour and powder sugar
Pour melted butter into flour mixture
Stir until mixture is crumbly
Press flour mixture into prepared pan, letting it come put he sides a little
Bake for 15 minutes
While crust is baking make curd
In the bowl of a stand mixer, or large bowl whip eggs until they are light yellow
Add in sugar, vanilla, baking powder and flour mixing until just combined
Add in lemon juice and zest, mixing until just combined
After crust has baked for 15 minutes pour lemon curd over crust
Bake for 40-45 minutes, or until center does not jiggle anymore
Let cool completely in pan, placing it into the refrigerator after it cools to room temperature
Just before serving sprinkle with powder sugar
Slice & ENJOY!
