a summer must…homemade chimichurri sauce
I am a sucker for sauces. I love them on almost any dish…heck I love sauces on really anything. Literally I love a good hollandaise for breakfast, and nice pesto for lunch and something like this Chimichurri for dinner (or anytime of the day).
And it is so pretty
I first fell in love with Chimichurri Sauce when I went to one of my favorite restaurants ever…Americas. It is the way cool Latin American inspired steak house. As you sit down they bring you crispy plantain chips with a light chimichurri sauce, the two pair so well together. Trust me I could fill up on just those as I drink the chimichurri sauce…yes I could drink it…it really is that good.
Not only is it super tasty but it is also so pretty. The vibrant green color make this a a must make this summer…and it needs to go on EVERYTHING!
Use what you have
For this chimichurri sauce I used parsley and cilantro. Some that I have had have used all cilantro or all parsley, while others through in some thyme, basil or even a little rosemary. Really you can use whatever herbs you have on hand, making this a sauce you can make anytime.

The last time I made this I used it on a Grilled Pork Tenderloin and it was so good. It is also amazing on steak, pan fried fish, with shrimp, raw oysters, in a salad or as a dip.
This sauce really is the perfect summer sauce to use with anything and everything.
