This is such a fun time of year.  Costumes, fun, spookiness and of course all the sweets you could want… including these Spooky Oatmeal Chocolate Chip Cookies.  Trust me these will be a favorite with kids and adults alike.  

Not just for Halloween (but SO fun for spooky season)

These cookies are amazing just on their own, but when you add in the Halloween sprinkles, well it just takes them to the next level.   They are crispy on the edges and chewy in the center, just as a cookies should be IMO.

If sprinkles are not your thing, just the M&M’s and chocolate chips work GREAT! 

Spooky Oatmeal Chocolate Chip Cookies

Perfectly Spooky Oatmeal CHocolate Chip Cookies perfect for all your Halloween festivities.
Prep Time: 20 minutes
Cook Time: 12 minutes
Servings: 30

Ingredients

  • 1 Cup Butter, room temperature (2 sticks)
  • 1 Cup Brown Sugar
  • 1 Cup Granulated Sugar
  • 1 tsp Vanilla Bean Paste (or vanilla extract)
  • 2 Eggs, room temperature
  • 2 Cups All-Purpose Flour
  • 2 Cups Old-Fashioned Oats
  • 1 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 1/2 tsp Salt
  • 1 Cup Chocolate Chunks (or chocolate chips)

Fun Decorating Options

  • Halloween Sprinkles
  • Candy Eye Balls
  • Halloween Ghoul's Mix M&M's
  • Chocolate Chunks (or chips)

Instructions

  • Preheat oven to 350℉
  • Line 2 cookie sheets with parchment paper, set aside
  • In the bowl of a stand mixer cream together butter and sugats, until light & fluffy
  • Add in vanilla bean paste and eggs, mixing until just combined, scraping down the sides as needed
  • In a large bowl whisk together flour, osta, baking soda, baking powder, & salt
  • Add oat mixture into mixing bowl, mixnig until just combined
  • Fold in chocolate chunks
  • Using a small cookie scoop place mounds of dough onto prepared pans, 2" apart
  • Bake for 10-12 minutes or until edges are starting to brown and center is set
  • Immediately press in M&M's, Sprinkles or any additional decor you would like
  • Let cool on pan for 10 minutes and then remove to a cooling rack to cool completely
