I was strolling down eh cereal aisle the other day, remembering all the kid cereal I ate growing up.  Everything from Coco Puffs to Captain Crunch (I liked the one with berries) to Cookie Crunch… and then I saw Lucky Charms.  I LOVED the marshmallows in Lucky Charms so much.  

The unicorn was my favorite one, but I was also a big rainbow fan as well.  As I was standing there reminiscing for a second it hit me… let’s put them into a cookie for a fun St Patty’s Day treat!!

It starts with the dough

I have been working on a new chocolate chip cookie dough that has cream of tarter in it and decided to try it with the lucky charm marshmallows.  I have to tell you it was perfection.  To make each cookie the same size, also ensuring they cook evenly, I use this cookie scoop. It is the perfect size.

So why cream of tarter?  It adds that little extra something that gives each cookie crispy edges and a chewy center.  I am not a scientist but all I know is that it works.  This is going to be my go to chocolate chip cookie recipe going forward so just get ready.

Charms everywhere!

To make these cookies extra lucky I put the marshmallows in the dough and on top of the cookies when they came out of the oven.  I love how they give the cookie a little extra sweetness and a bit of crunch for extra fun.

I couldn’t find the marshmallow only cereal so I had to pick mine out of the cereal by hand but if you can find just the marshmallows box these cookies can come together in no time… in under a hour.  This would also be a fun activity for the kids to help get them involved.

Lucky Charm Cookies

Lucky Charm Cookies are a fun St Patricks Day treat that kids (of all ages) are sure to love!!

Ingredients

1/2 cup butter, room temperature
1/2 cup brown sugar
1/4 cup granulated sugar
1 egg
1 teaspoon vanilla extract
Green gel food coloring
1 1/2 cups flour
1 teaspoon baking powder
1 teaspoon cream of tarter
1/2 teaspoon baking soda
1 cup chocolate chips
1 1/2 cups Lucky Charm Marshmallows (divided)

Directions

Preheat oven to 350
Line cookie sheets with parchment paper
In the bowl of a stand mixer cream together the butter and sugars until light and fluffy
Add in egg and vanilla and mix until well combined, scraping down the sides as needed
Add in drops of green gel food coloring until desired color is reached, start slow, green is a tricky color
In a bowl whisk together flour, baking powder, cream of tarter and baking soda
Add into butter mixture, mixing until just combined
Using a rubber spatula fold in chocolate chips and 1 cup of the marshmallows until evenly distributed
Using a Cookie Scoop place mounds of dough about 1 inch apart
Bakke for 10 minutes or until cookies are just set in the center and starting to brown on the edges
Remove and press on reserved marshmallows immediately
Let cool on pan for 5 minutes and then remove to a cooling rack to cool completely

Notes

Store in an airtight container for up to 5 days (if they last that long)
