Red Velvet Cookie Bar

Are you a fan of red velvet?  I AM…I mean I am a BIG fan of red velvet.  I literally could have it anytime, anywhere….but Valentines Day really is a perfect time for a little red velvet fun.

 

Super, Quick and Easy

The beauty of these cookie bars is that literally they can be done in less than 30 minutes, start to finish.  Yes you read that right…30 minutes and done. 

Now I am not normally the one who uses a cake mix, but in this recipe it is AMAZING!  

Extra M&M Fun

I am always the first to jump on the seasonal M&M bandwagon each holiday, but honestly the Valentine M&M’s are my most favorite.  Lets be real red, white & PINK…doesn’t get much better.   When I went to get my Valentine M&M’s a few weeks ago I found Caramel M&M’s which made me SO HAPPY.  They are just so YUMMY!

To take these cookie bars to the next level I decided to mix in some caramel M&M’s with the plain ones.  SO GLAD I DID!

Red Velvet Cookie Bars

Quick and East Red Velvet Cookie Bars loaded with tons of M&M's making them perfect for a quick treat RIGHT NOW

Ingredients

1 Box Red Velvet Cake Mix
2 eggs
1/2 cup butter, melted
2 cups M&M's (I used 1 cup plain and 1 cup caramel)

Directions

Preheat oven to 350
Line a 9x9 pan with parchment paper, or spray with nonstick spray
In a large bowl mix together cake mix, eggs and butter until well combined
Stir in 1/2 the M&M's until evenly distributed
Spoon into pan and spread into an even layer
Sprinkle remaining M&M's over the top and gently press into batter
Bake for 20-24 minutes, or until center is just set
Remove and let cool for 10 minutes in pan
Remove from pan and let cool another 10 minutes before cutting
ENJOY!

Notes

You can use any M&M's you prefer, or use with some chocolate chips if you prefer

My Girl LOVES them too!

My niece and nephew were over at the house when I whipped these bars up and Audra LOVES them.  She ate 3 or 4 throughout the night.  I tell you I love this girl so much!!
