Quick and easy lunch with some pesto love
Summer is in full swing and that means quick and easy lunches are a must. Something that is yummy, delicious and perfect for a quick bite in between swimming and a trip to the park…I love summer!
Just a few ingredients
Chicken salad is a favorite of mine. I love the traditional version with mayo, mustard and celery. I also love a fancier version with apple, cranberries and walnuts… but my favorite chicken salad is this Pesto Chicken Salad.
It is light but still full of flavor. I use pulled rotisserie chicken. I love how easy it is but also the flavor. Even better at my local grocery store they have pulled rotisserie chicken…it can’t get any easier. To the chicken I add in a little mayo, lemon juice, salt, pepper and pesto. I used this homemade pesto but you can use your favorite store bought to make it super easy.
So many options
Ok so I know this chicken salad may seem a little simple but you can jazz it up in no time. You can add in some nuts, cheese, or dried fruit. You can serve it with crackers, in a sandwich or in an avocado.
It may be simple but it is OH SO GOOD!

Even better it is pretty
Not only is this chicken salad super easy but it is also pretty. The pesto adds a great little hint of green that takes this chicken salad to the next level and if you ask my dad it also makes it healthy.
In his mind anything green is healthy…and I am not gonna lie I kinda agree.
