ham, ham, beans & more ham…
Easter has come and gone, and if your refrigerator looks anything like mine it loaded with tons of leftovers. I have some au gratin potatoes, green bean casserole, pistachio fluff and of course ham…tons & tons of ham…so why not add some beans to the mix?
It never fails, you think you buy a ham that is the perfect size for all the peeps you have coming, where most of it will be eaten and there won’t be half a ham in your fridge the next day…but it always seems to happen. Every year I say I am going to buy a smaller ham (and I did this year) but them I go and make more sides and desserts so everyone fills up and on those and I am still left with ham…oh well it could be worse I guess.
One of the best parts of having leftover ham is the pot of beans that can now happen. This year I decided to make some northern beans in the slow cooker with the ham and some spices to really make them something special.

For the ham I made sure to keep the pieces pretty chunky, but still bite size. I just love the larger chunks in each spoonful, to makes the dish feel that much more filling. For the spices I kept it pretty simple as I wanted the ham to be the star with a little all purpose seasoning, chili powder, salt, pepper & some dried herbs. When it all came together it was a perfect blend of flavors while still letting the beans & ham be the stars.
Don’t get bored with ham sandwiches or ham salad, go ahead and throw some beans into the slow cooker and enjoy this hearty meal that everyone is sure to love…just make sure to not forget the cornbread!
