Bacon Dijon Chicken

Happy Monday!  Do you have a busy week ahead?  I know I do and this one skillet dinner is definately on the menu.  It comes together quick and is loaded with tons of flavor (& even a little green) making this a dish for everyone.  

One Pan and Done

I love one pan dishes.  It makes life so much easier, especially on those busy weeknights.  This dish is the perfect one dish meal.  You start with the chicken and then you fry up the bacon and then make the super rich dijon sauce that is loaded with tons and tons of flavor.  

The beauty of this dish is that the flavors build one upon another.  It starts with the chicken and then the bacon…everything really is better with bacon.  Once you add in the cream, mustard, spinach and cheese you have a very flavorful dish that was super easy to make.

Feeling a Little Fancy

This dish once all put together not only is delicious but it also looks a little fancy.  This quick one pan dish would be perfect for a dinner party or a special occasion dinner.  

I made this dish for a welcome home dinner and everyone loved.  They thought I had worked on it ALL DAY, little did they know… well I guess they will know now.  Of well, it was delicious and looked AMAZING!

Don’t forget the sides…

I love a good main dish but I am really all about the sides.  One of my favorite KETO sides is this Roasted Cauliflower Mash.  It is perfect with this dish, especially when you pour some of the delicious dijon sauce over the mash.  

I also love these Roasted Brussels Sprouts with this dish.  They add a nice smokiness to the dish that works really well with the richness of the dish.

Bacon Dijon Chicken

Bacon Dijon Chicken is the perfect one skillet dinner for the busiest of weeknights or the laziest of weekends. It is loaded with tons of flavor and yumminess making this a dish everyone will love.

Ingredients

Chicken
2 pounds boneless, skinless chicken breasts (I used 4)
1 teaspoon salt
1 teaspoon pepper
1 tablespoon extra virgin olive oil
The Sauce:
1/2 pound bacon, cut into 1/4 inch strips
2 tablespoons butter
1 onion, chopped
4 garlic cloves, minced
1/3 cup chicken stock
1 1/2 cups heavy whipping cream
2 tablespoons Dijon mustard
1 teaspoon black pepper
1 teaspoon salt
1/2 cup Parmesan cheese
2 cups baby spinach leaves
Optional Yumminess
Shaved Parmesan
Chopped Herbs

Directions

Season chicken with salt & pepper on both sides
Heat butter in a large non-stick skillet over medium heat
Add chicken to skillet and cook for 7-8 minutes per side, or until chicken is cooked through
Remove to a plate and cover to keep warm
To the same pan add in the bacon strips and cook until crisp
Remove to a paper towel lined plate
Drain the grease, reserving 2 tablespoons
To the bacon grease add in the butter and onion
Cook onion until soft, about 5-7 minutes and then add in garlic and cook for an additional minute
Stir in chicken stock and bring to a simmer
Let simmer for 5 minutes, or until liquid resolves by 1/2
Stir in whipping cream, dijon mustard, pepper and salt
Bring to a simmer and cook for 3-4 minutes, or until sauce is starting to thicken
Stir in parmesan cheese until just melted
Add in spinach and stir until wilted
Stir in 3/4 of the crispy bacon and place chicken back into sauce
Bring to a simmer letting the chicken heat through a little
Top with remaining bacon and shaved parmesan (optional)
Serve immediately
