My new FAVORITE Brookie
Ever since Brookies came onto the scene a few years back I have been LOVING them. There is just something so yummy about bringing together 2 of my favorites, brownies and chocolate chip cookies.
A little something extra
As much as I love the traditional brookie I wanted to add in a little something extra…some caramel. Now I could have just used some salted caramel sauce or caramel candy but I thought rolo’s would really put these brookies over the top.
The rolo candy not only adds in a little caramel but also an extra bit of chocolate making these brookies truly something to remember.
Even the batter looks yummy
Now I know the idea of a brookie can be intimidating…two batters and all, but these are super easy. You only need one bowl and an extra pair of hands to unroll the roles and you are set. Yes you read that right…just one bowl.
First you start with a super easy (but super delicious) chocolate chip cookie recipe. Then you roll them into little balls and put them into the freezer while you make the brownies.
For the brownies you simply wipe out the bowl and then melt the butter and chocolate chips and then whip up the super chocolatey brownie batter.
Spread the batter into the pan and then drop in the chocolate chip cookie balls and then come the Rolo’s. I literally put them in every space I had available…I really love Rolo’s. I wanted to eat it all right then and there, but I thought I should go ahead and bake them.
It is time for a Rolo Brookie!

No Rolo’s… No Worries
If Rolo’s are not your favorite no worries. You can use really any candy you want. Plain caramel candy would be great, or salted caramel sauce. You could also use peanut butter cups or chopped up snickers. M&M’s would also be fun.
Use whatever you have on hand…just be sure to make them.
