Banana Crumb Muffins

I have mentioned this before but I HATE banana’s… like passionately hate them, but I know some of you love them.  So for my banana loving peeps… here you go. 

A new muffin love…

Due to unforeseen circumstances I found myself with 4 bananas that were starting to turn.  You have to understand bananas are never in my kitchen so when they started to go bad I knew I need to use them quickly.  

Muffins seemed like a quick, easy and yummy option… so Banana Crumb Muffins were made. 

All about the crumb…

My perfect muffin always has a crumb topping… ALWAYS!  My Pumpkin Crumb Muffins are some of my fave so I decided to go with the same idea for these.   It is buttery, sweet, and  bit crunchy making for a perfect crumb IMO.

For some added fun to the topping you could throw in some chopped pecans or walnuts or even some oats.  There are so many options … have fun with it!

Banana Crumb Muffins

Quick and easy Banana Crumb Muffins are a fun and super yummy way to use up those ripe bananas you have in your kitchen right now.

Ingredients

Muffins
3 ripe bananas
1/2 cup granulated sugar
1/2 cup brown sugar
2 eggs, beaten
1 teaspoon vanilla bean paste (or vanilla extract)
2 cups all-purpose flour (or gluten free 1:2:1 baking flour)
1 teaspoon baking poder
1/2 teaspoon baking soda
1/2 teaspoon salt
Crumb Topping
1/4 cup butter, room temperature
1/4 cup granulated sugar
1/2 cup brown sugar
1/3 cup all-purpose flour (or GF flour)
1 teaspoon cinnamon (optional)
Course Sugar (optional)
Optional Add-In's
1/4 cup chopped pecans or walnuts
1/2 cup oats

Directions

Preheat oven to 350
Line 12 muffin tins with liners or spray with nonstick spray
In the bowl of a stand mixer, or large bowl. beat bananas until almost smooth
Add in sugars and mix until just combined
Add in eggs and vanilla bean paste and mix until well combined, scraping for the sides as needed
In a small bowl whisk together flour, baking powder, baking soda, & salt
Slowly add in flour mixture to the bananas and mix until just combined
Using a large cookie scoop, or spoon, fill each muffin tin 3/4 full
In a medium bowl mix together all the crumb toppings until mixture resembles course sand
Evenly divide over each muffin
Sprinkle course sugar over crumb topping, if using
Bake for 20-24 minutes or until topping is starting to brown
Remove and let muffins cool for at least 10 minutes
Serve & ENJOY!!
